Making Incredibly REALISTIC BACON from Broccoli!! I'm bringing back the vegan bacon series with a bang!! Broccoli bacon!! I had this idea after I was reminiscing over some older videos and I was making dinner wondering how to prepare the broccoli and not waste the stems. I usually just cube them up and steam them with the rest of the broccoli but I thought I wonder if I could turn them into bacon... and Im so glad I tried!!

    • Broccoli stem is basically kohlrabi (they are the same plant, but broccoli was selected for oversized florets, and kohlrabi for an oversized stem), and it's 100% edible (the peel is too tough to eat raw, though).

    • Whoa! What?? Don't discard the stems! If in doubt, then cut cross sections for stir fry or just boiling in soup for noodles. They absorb a lot of the surrounding flavour. I consider them to be the best part of the plant. The green stems and leaves of cauliflower should be treated as Chinese vegetables for stir fry.

  • I do tofu bacon. I use the typical "bacon" marinade, then dehydrate the tofu until its jerky. You can refrigerate it and eat it that way as a jerky snack or throw it in a pan with some oil and it's cooks into a really good bacon

    • If it's not too much to ask, can you post a recipe with measurements and what type of tofu you used? I tried something like that once (tofu marinated, dehydrated). It was incredibly umami. Way way too much umami. Even though I liked the marinade plain. Never tried something like that again. But it might be time to give it another chance.

  • People would be surprised what one can turn into "bacon". I fried a mixture of chickpeas and kidney beans chopped in a food processor and it came out like bacon bits.

  • One of my favroite side dishes recently is brocolli tossed in avocado oil with indian spices like garam masala and turmeric and roasted in an oven. Super simple and tasty and healthy. Will definitely try this recipe.

  • I found this channel back in the original bacon days. While I'm not a vegetarian I really enjoyed making carrot bacon and have done so several times. Lesser success with other veggies but I tried a few. Glad to see the return to bacon. --- I'd be curious to see a couple things in that lane. - One - The effect of salting/sitting the veggie slices. My experiments with this really depended on the veg I started with but helped draw in more marinade (and therefor flavor) as well as give that appropriate chew texture. - Two - Some experiments with different marinades. Perhaps a baseline mix and then additions for different flavor profiles. - Side note: I found that Marmite and Maggi really helped give depth to the umami.

  • Thanks for the video! If you wanted to tackle a recipe I think would get a lot of views, I'd love to see a Upton's Natural's Chorizo seitan copykat. The ingredients are only Water, vital wheat gluten, soy sauce (water, wheat, soybeans, salt), apple cider vinegar, garlic, guajillo, sea salt, onion, cumin, black pepper But it's also got a really great texture. I haven't been able to quite figure out how they make it, so I'd appreciate if you gave it a shot!

  • I always put the stalks in soup but seeing this I might actually try it. You could even serve it with broccoli soup to get an extra texture, together with some vegan onion cream substitute from chefsteps

  • I make a lot of banana bacon as I get free bananas from work. One thing I do before marinading them is to soak the depithed skins in brine. I know it's not good for you because of the latex allergy but it really does work.

  • Video request: Layered seitan. I'm experimenting right now with layered seitan (like the dough for croissants is made). Seitan in food processor until it becomes really strange and stretchy (so far a recipe essentially from "awesome vegan dad"). Then I role it thin, put a thin layer of something on it, fold it up and repeat until I get the number of layers I want. I tried various combinations of oil, nutritional yeast, cooked red lentils puree and water with psyllium husk so far. All came out very different. Nothing bad. All tasty in their own way but all with room for improvement. Lately I thought about using carrot puree (just because of nutritional aspects). I think you might have the better experience with getting ideas to work and perfecting a recipe. Aby chance you might try that? Or does anyone know a good recipe. I tried to google it, but couldn't find one.

  • I noticed you didn't actually say "cheers" when you tapped the broccoli bacon at the beginning, but you did make the gesture. You said "cheers" before the sandwich, which is great, but there was no tap of the sandwiches. Remember, there needs to be at least two audible "cheers" (with taps) during the video

  • Letting the cut broccoli strips sit for 40 minutes or longer to marinate will also help create sulforaphane. The precursor chemical in broccoli necessary to make sulfouraphane (glucoraphanin mixes with an enzyme in humans called myrosinase to create sulforaphane) is destroyed during heating and cooking broccoli, preventing sulforaphane. However, cutting up broccoli before cooking creates sulforaphane, which itself is apparently not destroyed by heating and cooking.

    • Yeah, youtube premium only removes the skippable ads from google. Is this the first you are seeing this? Content can still be sponsored, just like watching TV when there is baked in product placements. Its wild to me as a content creator getting comments like these. I watch loads of creators and 99% of them have sponsored segments, some like phillip defranco has 2-3 and I never once feel the urgency or the need to skip the ad or be so rude to leave a comment about it. LIke beyond being negative what do you think you are accomplishing by posting that comment?
