An American here, who has enjoyed the privilege of experiencing multiple German Christmases. I have to say that no one does Christmas more beautifully or solemnly than the Germans , but weirdly, food is something of an afterthought. The English cultural heritage puts much more emphasis on feasting. Just a side note, ‘wild meat’ = game. The venison with Spätzle she makes looks absolutely awesome.

Well said. I grew up in the Danish tradition, many similarities to German ... and I truly appreciate what you've shared. As a child I thought everyone experienced similar at Christmas. The older I get, the more I understand how special traditions like lighting candles on the Jul tree, dancing round and the special foods are.
it's a tradition to serve the more fancy dish the day after christmas eve (Erster Weihnachtsfeiertag). The tradition in our family was to have different meats with Potato salad at christmas eve, and turkey with mashed potatoes and red cabbadge the day after,,,, we would invite the whole family to eat with us together :)
During my high school days my family and I hosted a German exchange student for 1 year. She cooked us one meal before she went back home and it is the best meal I have ever had to this day!!!😍😍🥰

I am not sure how to pronounce the foods..but I remember there being a deep fried cutlet that tasted of lemon butter all throughout, with a side of cubed potatoes and purple cabbage. There was also a dessert of chocolate bread and cake. Truly amazing. I believe it was called schnitzel but I’m not too sure of the other names.

I had a fermanagh student 5 years ago and she wasn't allowed to return to Germany fir Christmas holidays as the agency wanted them to experience a traditional Irish Christmas. She was vegetarian, but her family were not as far as I could gather. She was thoroughly confused by out traditional meat Xmas roasts obviously, so I asked her what her traditional Christmas Dinner would be with her family in Munich. She had to think for a few minutes and then said 'we usually have raclette.....kind of a mixed grill of potatoes, veg and cheese or meats'. It sounded very odd to me, in fairness and I did not have the machine. So in the end I did her a vegetarian nut roast with season roast veg on the day, and some nice cheeses, nibbles etc later in day. She was flummoxed by the tastes of our Christmas cakes, puddings and mince pues which were not a hit 😆, but she DID try everything that wasn't meat. Her grandma sent her some German sugar cookies she made herself, and I surmised these and marzipan and nut type pastries etc are all the rage there.
When I was a kid my au pair made sauerbraten with ginger snap cookies in the sauce to thicken it.
I fell in love with German cuisine as a student many years ago in Erlangen. So, the most popular Christmas meal at our house has often been Sauerbraten with Kartoffelkloesse and Rotkohl. I'm being lazy this year, substituting pork roast for the Sauerbraten. Raised in Michigan and currently living in Nebraska, USA. Was amused by your potato salad, my wife, my mother, my mother-in-law all made the dressing for their potato salad using Miracle Whip and mustard - with the addition of a little sugar, this recipe going back at least 60 years

If you mean university - than yes. I studied in Trier and Cracow University. I was studying Marketing and Management. Foreign study sounds more interesting though;)
I grew up in Michigan as well, and am of German descent. Yes, simply mayo and mustard dressing in our house, too. I'm doing some potatoes today (Christmas eve) in a German salad with leftover chicken, onions and celery (maybe eggs, but not really needed, I think). That's about it (other than cayenne pepper!)

My grandmother was German and we always had the potato salad and sausage for birthdays. My 3yr old never got to meet her so it was very special for his birthday this year to be able to share that tradition with him and tell him about his great grandmother 💚

My grandmother was the daughter of German (Prussia) immigrants to America circa 1890’s and came to California as a cook around 1920. I find it hilarious that the only recipe I have is one she obtained from a Mexican lady while camping near the border in 1923 for enchiladas. I love hearing the German recipes!!

I’m from the US but currently living in Luxembourg with my British partner. We have a combined tradition where I get to have my traditional southwestern American dressing and he gets his roasted potatoes. Typically we have a turkey but back home we were able to do a nice prime rib a few times and it was great. Lots of good things to go with and in my family we always had some type of a fruit salad with a heavy meal and was told by my grandmother that this was to help digestion. Thank you for the great video and all of the food types. As I’m now living in this part of the world I’m interested in trying all of these different things.

There are more and more international marriages and I really think that combining the traditions is beautiful. Half of my family is Polish so we also eat some Polish dishes during Christmas. My family had the Austrian tradition of cooking thanks to Mom who was born there.. I also taught school in Bavaria for a year with a US group of 17 teachers. I love your recipes! Made Grandma's duck recipe (boiling water over the skin rubbed with garlic and fresh lemon) and guests were still sucking the bones past midnight. You make me want to go back to Germany again for the 6th time.
My family here in America has traditionally made sauerbraten and spaetzle. Our spaetzle are large made from just the normal flour, water and egg. We cut them off the edge of a plate into boiling water. After we boil them, we place them on a rack on the counter to dry. Then they are fried in butter. Absolutely wonderful with sauerbraten gravy.

born and raised in Germany(Schweinfurt), been living in the US since 1994. Its always been a tradition when i grew up and i kept with it when i moved to America 👉Christmas Eve> 1.Backerbsen Soup(a junk of bacon in the broth for flavor) followed by potato salad and wieners. Christmas Day> Roast Duck, Potato and Bread Dumplings, Red Cabbage. In the US there's only one day of Christmas observed so therefore leftovers on the 27th for us 😉

My dad moved from Germany to America in the 50s When he married he wanted his children to be American so he decided to have Christmas Eve of German cheeses, meats and sides. My dad has been gone for almost 20 yrs but the tradition continues :)

My family did the same thing for Christmas Eve. Some of our sides were german potato salad, german pickles, meat salad and deviled eggs.
We are having goose with a spicy pear, sausage and herb stuffing. On Christmas Eve it’s halibut in a wine and citrus sauce x

Wow, thanks for the overview of German Christmas traditions. You are right: if you have high-quality ingredients, a simple meal can be just like a high-end restaurant. Stuffing the duck or goose with bread and chives is a great idea. I think that a cherry sauce would be great. The roast looked amazing! Adding bacon to the braising liquid would be amazing. The potato dumplings and spatzle look delicious as well. I have microwave red cabbage with apple in the past, and it was delicious, so I am sure that the red cabbage would have a lot of flavor. Once again, thanks for all the information regarding German Christmas traditions!

This, of course, varies from region to region and family to family. Our traditional holiday meal included roasted goose or duck, spuds, gravy, sweet & sour red cabbage, varied veggies, rolls, possibly gooseberry torte, brandy soaked cherries (my Oma's favorite), and other sorted delectable treats. Yes, I passed this along to my children.
I lived in Frankfurt for almost 4 years and loved everything about that city. The food, breads, the people. I'm not german but I still miss the place and the food.
I spent childhood in Germany & I miss so much.

As I have said in the past, my high school Baking instructor was from Bonn. We never had a "traditional" dinner. It centered around the kids preferences. What was a tradition and still is, is that I bake loads of cookies and stash them in tins. My favorite baked treat is Stollen baked for Christmas morning. I realize that I could bake it anytime of the year but it is Christmas for me. I love it with the center filled with marzipan. Greetings from Idaho!

@@cooking-the-world I usually bake traditional American style cookies, like chocolate chip, butter spritz, peanut butter with a chocolate candy on top, a cream cheese pastry filled with jam and whatever I have been craving throughout the year. I also made a huge fruitcake for me brother as he is the only one who likes it!

I was born in Berlin/Germany and the procedure on Christmas eve was always potato salad and Viennas, on the 25th. Goose with Potato Dumplings and red cabbage, Carp was always served on new years eve!
But not how she is stuffing the goose....

Nun wir haben jetzt andere Zeiten und ich, männlich, stehe seit bald 30 Jahren am Herd. Unsere Tradition an Heilig Abend ist Steak mit grünen Bohnen und selbst gemachten Pommes. On the 1st holiday I make Barbarie duck breast with red cabbage and spaetzle (a kind of noodle)
I just purchased a Raclette for my family for Weihnachten because of your video. We enjoy doing the fondue - both cheese and meat fondue - and it's time we "full German" with a Raclette! Froehe Weihnachten y'all (from Texas)!

As a German, I would say I am either a madman or a genius for inventing butter-fried Spargel (white asparagus) spiced with Chilli, hot Paprika and Ginger. It is very warming in winter!

Ich erinnere mich, dass es Tischreihen und eine Hierarchie der Sitzplätze gab, weil ich nie am Kindertisch vorbeikam, der ganz am Ende, fast in der Küche, als Kartentisch diente. Trotzdem war die gebratene Ratte immer noch lecker. Dazu gab es meist Kartoffelpuffer. Mein Onkel sorgte dafür, dass alle Kinder zwei Schuss Schnaps bekamen. Oh, das gute Leben!

Wonderful video. I lived in Germany for several years. All the foods you showed with the exception of the Carp I had the opportunity to try. One dish not mentioned was Sauerbraten, one of my favorites. It takes so much time for the marinading of the meat, but so worth it in the end. Have a Happy Christmas.
Sauerbraten rocks :) I decided to go less regional, therefore I made Schmorbraten instead. But you are right - it’s such a staple! Merry Christmas ☺️

I haven't met a Spätzle I didn't like. My grandmother use drop them from two teaspoons into boiling water. I have always made the same way. Sometimes when I sick and need chicken soup, I put my breaded and buttered Spätzle into a a bowl and top with fresh parsley the chicken soup and a bit of cheese. I am happy to report that recovery from a bad cold is instantaneous! Such good eating without a doubt.
My dad knocked himself out once, to cook carp, with a great recipe he was given. When it was done, he took one taste and threw it all out. My German grandparents and parents usually had roast goose and duck, with mashed potatoes, gravy, dressing, corn, peas, and lots of pies; apple, pumpkin, mincemeat, pecan, and whipped cream, pfeffernusse and other cookies. One of my G’mas never had a green leaf for a salad. Her salads were always jello, whipped cream, sometimes strawberry ice cream, and frozen strawberries. Her cinnamon rolls won a lot of blue ribbons at the fair. Now my kids run the gamut from vegan, gluten free, dairy free etc., so I just show up, and eat whatever they serve, which is different. A reason why carp was so popular was that Catholics didn’t eat meat on Christmas Eve. When my mother was growing up in Bavaria it was always carp Christmas Eve and goose Christmas Day.
That's right! For several year you are allowed as a catholic to eat meat on the Christmas though. But tradition is tradition:) Did you do poached carp?
I am Czech, and our Christmas menu is not so festive or varied. We have fish soup with carp head meat and roe, breaded and fried carp and fancy potato salad, with many ingredients and mayonnaise. It’s followed by braided coffee cake studded with raisins and walnuts, chocolate cake, apple strudel and various cookies. And fruit. That’s modern menu. Duck or goose with red or green sweet and sour cabbage and bread or potato dumplings next day.
I think it's because carp is easily available in this region of the world.
@@claudesantolini6335 That could be. I visited 6 different grocery stores before I found carp in Frankfurt. I thought I will have to give it up but thankfully one international grocery had the last one.

My Mother's people came from Hesse, Wurttemberg and WesPrussen - My Grandma Kerber tried to teach me to cook some German dishes but I was young and didn't care about cooking. Now that I am retired I very much enjoy learning. I was born and raised in the Mid-West State of Missouri in the NW part and completed my education across the MO River in E Kansas. Now I live in Florida where to my surprise there are German restaurants and bakeries. Anyway, my son and I decided that I should slow cook a good beef chuck roast in a slowcooker with onions, celery, potatoes and carrots - a gravy from the liquid. Pumpkin Pie with topping for desert and iced tea. This is simple but excellent because meat is so expensive now. Thank you for your videos

I'm so glad that I found this site. My family is mostly German. My ancestors from both halves of my family came to America in the late 1700's and early 1800's. Do you know if your ancestors were with the Hessian Army at the Battle of Trenton, the morning of December 26, 1776? It my American history studies that I discovered so many of the young in the Hessian Army at the Battle of Trenton, decided to stay in the new nation of the United States after the Revolutionary War was over. Within three decades the descendants of those who stayed, were the backbone of the great states of Pennsylvania, New Jersey, and parts New York. In the 1960's, I lived near an Old German Church in Seattle, Washington, founded about 1885. Whenever I discovered the door open on my walk-bouts, I use to go in a sit a while and wonder if any of ancestors from the Battle of Trenton lived with me in Seattle? I could never answer that question, but I think my assumption was very right.

As an American family with German ancestors and a husband who was born in Heidelberg, Germany to a native German mother, we decided to cook a German meal for Christmas dinner. I am making Weinerschnitzel with Paprika and caper sauce, home fried potatoes, red cabbage, salad and home baked bread. Dessert will be my Mother’n’Law’s recipe for Linzertorte. I make the Linzertorte every Christmas.

@@grandmak. Hope you ask for a take home order of goose fat. It is the best part, especially spread on bread and topped with a little salt. Makes the best fried potatoes as well as cookies.

So interesting, I love these videos. My grandparents on both sides are Austrian and every Christmas they both made oil fried potatoes with sausage and sauerkraut it was always so good that I still make it myself now 10 years later lol.

We make the goose the Russian way, with apple stuffing. Goose is expensive in the USA, so it's very much once a year occurrence. Merry Christmas!
Aplle filling for the goose s also common in Nordern Germany.....and yes goose is very expensive in the states, but once a year it has to be. Merry Christmas to you
@@garliklover My family always had goose for Christmas but we lived on a farm and raised our own. As I grew up I carried on the tradition until the last few years. I just can't see spending a $100 for a goose. Guess I'll have to learn to rely on memories. Also we always kept the goose grease and often spread it on fresh bread with a little salt. It was just a to die for treat. Miss those days.

I love rouladen but make them for me son’s birthday in January every year. I’m not sure about this Christmas dinner yet. We usually cook a turkey.

I don’t put mustard in potato salad, but I do put mayonnaise and sour cream to tone down down that mayonnaise taste, but sometimes I put ham or bacon in it, my mama is from Duisburg, I miss her tremendously, 💖🎄💖🎄💖🎄💖🎄💖🎄💖🎄. I made a rib roast, with roasted potatoes along with turnips, n onions and beets, pastry cups with asparagus and cheese melted over the top, also made potatoes dumplings too, Brussels sprouts, and more! Last year I made a fresh ham roast, I marinate it too frohlich weinachten!
Leg of lamb roasted with potatoes and carrots. Sweet potatoes in a maple, pecan, butter sauce. And rolls with butter. Dessert was goodie bars, and peanut butter fudge. Kept it kind of simple this year, we're all still staying home due to Covid so family connected via computer and it was just hubby and me for Christmas dinner.
It all looks delicious and flavorful, the house must smell wonderful.
It smelled for a week:) But now I still have some dishes in the freezer, so I can enjoy it during Christmas. Thanks for watching and Merry Christmas!

My Father use to have Creamed Herring for Christmas and New Year's Eve. But that was strictly his treat. The rest of us in the family would not have it except for my Father's youngest brother and his Mom,my Grandmother. I might try to make some Rouladen this year if I find all the ingredients easily.
Is that because you didn’t like the herring? Or because it was his thing?:) Rouladen sound amazing.

My family is from Frankfurt and I have asked my oma this question, she was there during WWII and she remembered having stuffed rabbit for Christmas.
This was so interesting and informative.
I was waiting for the carp to put in an appearance. Some years ago I spent xmas with friends in West Sussex. My friend was employed to look after the extensive grounds of a very old house. In those grounds was a small lake. In said lake lurked carp of various sizes. All introduced by Nige. That xmas a fish was caught by Nige. Then prepared by Dru, which included stuffing with dried fruit and other tasty stuff! I remember it was covered then baked in their Rayburn oven. It was superb, maybe because of the freshness. The monks of old knew what they were doing with the humble carp.

On my Christmas table I cook a have a variety of roast meats. turkey,beef,pork and gammon. We have roast potatoes cooked in goose fat,boiled mashed potatoes with butter, cream and seasoning, whole plain boiled potatoes with a knob of butter on top with season and a garnish of parsley. Pigs in blankets, sprouts with roasted bits of bacon. Steamed white and green cabbage,carrots,peas. Mashed steamed carrots and turnip. Cooked Red cabbage, Cauliflower cheese, sliced potatoes cooked in cream,cheese and onion. Half’s of roasted onions cooked with the beef. Must not forget the Yorkshire puddings, stuffing balls made with seasoned sausage meat also plain sage and onion stuffing. It’s a lot but for once a year with the family it’s amazing. My hubby helps with all the peeling chopping. Are traditional desert is Christmas pudding with a choice of brandy sauce ,fresh cream or custard. Also ice cream with fruit. Cheese and crackers . We have a champagne drink to start the meal with a choice of white wine or red wine plus fresh fruit drinks of apple or orange plus, coke a cola and lemonade.

This Christmas Eve I’m serving as the main dish a double glazed spiral sliced ham from Aldi. I’m going to prepare it on our Kamado grill, so it will be double smoked as well.
