  • This is hakka style fried pork belly. The red fermented tofu adds a funky note to the fried pork, a bit like blue cheese, which is quite addictive. It is then dredged in corn starch or tapioca flour (not regular flour) to give it a crispy texture.

  • that part of the pork is greasy and fatty. Best for Jerking in Jamaica. Render a lot of the fat into the fire for great flavor.
