You probably figured this out already but you need to smooth everything out the way you want it and then file a bevel into the blade and then you can sharpen it. Those first 2 stones you picked up are for sharpening. The dark colored one with the diamond pattern on it is for flattening and maintaining the sharpening stones. Bismuth is pretty soft I don't know how well it would hold and edge so I wouldn't waste my time sharpening it often.
I wouldn't have spotted the flattening stone if I didn't have one. Very useful. If used correctly...
For anyone watching who plan on doing something similar, theres a specialty file for actually cutting down large areas of metal called a Vixen File, if they had used a vixen file they could have saved a significant amount of time on the initial cutting down of the blade

The black flattening stone you were using to try and flatten the blade, is actually for flattening the sharpening stones to make sure they are perfectly flat for use, you also have to soak the stones in water for about 5 minutes before use, put the 800 grit stone into the rubber base squares and then put the whole thing into the wooden base. What I should point out is that these stones are for sharpening hardened steel knifes and not a soft metal like Bismuth, you will probably just end up clogging the stones. To hack away the amount of metal you need to remove you need a belt sander.

When you live in a country with universal health care you can do stupid things like that. If you look real close at his wrist you can see where the scar goes around from the transplant. He was really lucky to get a donor hand with almost the same pigmentation as his original hand. The first he tried that trick it didn't go so well and we're all so proud of the hard work he's done in his recovery. Niles Blue is so brave to to try the same trick again so soon after recovery.

Unlike a few commenters I’m not super experienced in metal work and whatnot but I have used tools many of which Neil uses here and let me tell you, I feel like an expert because watching him made me laugh and cringe and feel things I can only describe as confusion and concern combined
That stone with the lines through it is a flattening stone, not for sharpening, it's for making your other whetstones flat. Totally fine for leveling surface areas, that's what it's made for.
He’s a smart man, but maybe not “print the knife diagonally” smart...
And not "draw your cut line for the back of the knife against one edge of the bismuth block so you don't have to saw as much" smart either lol.

the dimensions of a paper are smaller than the knife he ended up making so even rotating wouldn’t have made as big of a knife as he ended up with
