Mexico appreciates good cuts of meat. Whether its birria, cow tongue, pig cheeks, tripe, carnitas with shoulder and some belly, cow brain, fatty cuero for chicharrones... mexicans have some of the most delicous preparation of meat on the planet. I miss Oaxaca so bad specifically... WOW man food all over MX is incredible and lovely but Oaxaca was like mecca for me

Y ñaño, btw please dont take torillas for granted... I live in Perú and people here dont know NOTHING about tortillas.. we have the BEST food in south america HANDS DOWN.. BUT I miss a good, fresh, hand made tortilla from a wrinkled lovely old lady. Nothing, nothing in this world beats an amazingly cooked cut of meat, cilantro, cebolla, tortilla, a glass of horchata. Care, attention, ingredients all brought together with not only other herbs, spices but the knowledge of how to cook things in comparison so everything as served at its very best. I have recently cooked lambs kidneys, liver & hearts into a byriani - If found this video earlier, I would have been more adventurous! When he start the cooking of meat he put water on it and water became hot because of heat ,then he removed water so actually he washed the meat before cooking from hot water in pan,i think no hygiene issue in this way.

Very well made food preparation video. In all my years of watching this type of food being prepared, I have never seen so much butter being put into a dish. Brains heart, and testicles need alot of butter I guess.
