I'm guessing here because there are no descriptions or words spoken, except "Opaaaa"! The raw prime rib looks like the typical IBP product for prime rib restaurants. I am probably wrong because it looks like it could be a wet aged prime but it seems like it was previously plastic wrapped. About a 20lb whole, bone in beef rib. Now the wet brown liquid. What is it? I guess its a mixture of soy, and Worcestershire and perhaps honey, to make it stick better? Then comes the dry sprinkle, looks like a mixture (proprietary no doubt) of pepper, garlic powder, onion powder and perhaps salt. Then the most fascinating to me...Is that powdered sugar? Absolutely brilliant! This would form a kind of "candy" like crust while it bakes at (secret?) temp in the Alto Shaam. A few hours later and you have a most beautifully baked, RARE Prime Rib. Perfect for service Au Jus! More please!

Some of the BEST prime rib I have ever seen. 🤤🤤🤤
They cooked it nicely, didn't they?
if I ate there, I'd tell them not to cut off the fat on my prime rib 😋
You do that and the cutter might taint your prime rib out of spite!
I think they sprinkle flour on it, not powdered sugar.

@@boshumok6399 sadly yes, we don’t have steak and bbq restaurants at all.
