Campfire Spiced Winter Lamb Stew. Kazan Afghan Pressure Cooker.

In this video, I head down to the river, through the flood water to find a spot to do a bit of cooking. After setting up a tarp and getting a fire going, I begin to prepare lunch - a spicy, winter stew cooked in an Afghan Kazan pressure cooker. Pressure and steam build up inside this clever device as it heats up over the fire and that pressure forces the temperature much higher than normal - the result is a much faster cooking time and full flavour as nothing is lost to evaporation - a delicious, warming, spiced stew with melt-in-the-mouth tenderness in just 20 minutes.
As a child, my mother often used a pressure cooker and the hissing sound it made as sat on the stove terrified me. I can honestly say though, I am now a convert - fast cooking times mean less fuel which can only be a good thing, the cheapest, toughest cuts of meat become tender and succulent and the food retains all the nutrients and full flavour - its a winner for me!

Winter Spiced Stew Recipe
1 onion, coarsely chopped.
600g (1 1/2 lb) diced lamb
1 potato, peeled and chopped
1 carrot, peeled and chopped
1 parsnip, peeled and chopped
4 cloves garlic, chopped finely or minced
3 Cardamom pods
3 cloves
1/4 tsp ground ginger
1/2 cup tomato puree
2 cups water
1 cup red wine
Salt
Oil
Spice mix
1 tbsp black pepper
1 tbsp ground cumin
1/2 tsp tumeric
1/2 tsp ground cardamom
1/2 tsp sumac
Fry the onions and meat until the onions have softened and the meat has browned a little.
Add the spices and cook for a minute or so to release the flavours.
Add the tomato puree, water, wine, vegetables and salt.
Close the cooker and cook over a medium hot fire for 15-20 minutes.
Remove the pressure cooker from the heat and allow the steam and pressure to completely release before opening.
Enjoy.

  • Tried mine for the first time Saturday. Made a Guinness lamb stew. Amazing! Had some family over they loved it and were amazed with the cooker. Also made soda bread. Was thinking of having some leftovers for lunch today at work but there was none in left. Guess that's a compliment.

  • Simon, I was camping once in the 14k alt. Tundra. I had made a bushcraft Tee Pee and decided to leave behind some spare canned food for next trip. I came back a week later to the same spot. I spent the night and heard a bear come through camp. When I came out of the tent a tree hand words written on it from the bear. "I so enjoy the dinner you left me last time , hope you do the same today if not...I hope you have good taste" ! So I left the contents of my pack at the sight and headed out quickly. Hate say, I have a new favorite camp site..ten miles away!

  • First time we hear Afghanistan for not the “bad” reason with this pressure cooker. Since pressure cooker is about saving time here is a tip: to release the pressure quickly, put it -if available- under cold running water. Within ~10 seconds compared to minutes otherwise, the steam and pressure will be gone! Keep up the great job

    • @@s.leemccauley7302 I see a point in what you say! I hope stainless steel pressure cookers are strong enough. I am using it this way for quite some time with cookers from SEB, TEFAL, FISSLER , all reputed manufacturers with heavy gauge metals and so far I had no issues. They seem very thick and sturdy to withstand this but you put a doubt in me now... Maybe other metals as aluminum and from questionable producers or with not high standard manufacturing procedures are more susceptible to break. Your point is useful and I keep it.

    • A lot of recipes will say to bring to pressure (2 'whistles' as they say in India) then take off heat and naturally depressure/cool as part of the cook time

You're awfully brave to swing that pressure cooker around like you did. I burned my hand severely from the lid of a tea kettle on thanksgiving morning and am still recovering!
