Today, I’m sharing how to make a classic opera cake step by step. It’s called “A king of chocolate cake” for a reason. The rich cake melts in your mouth with an amazing aroma.

2 sheet pans: 10.5inch | 26.7cm ✖️ 15inch | 38cm
• Powdered Sugar 100g | 3.5oz
• Almond flour 100g | 3.5oz
• Whole eggs 150g (about 3 eggs) | 5.3oz
• Egg white 140g | 4.9oz (from about 4 large eggs)
• Granulated sugar 70g | 2.47oz
• All-purpose flour 35g | 1.2oz
• Butter 15g | 0.5oz
Bake at 410F | 210C for 6-7 minutes until it gets nice golden brown.
* The time & temperature may vary depending on the ovens.
Coffee Syrup
• Milled coffee 35g | 1.2oz
• Water 340g | 12oz
• Granulated sugar 70g | 2.47oz
• Cognac 100g | 3.5oz
Chocolate for sponge
• Couverture chocolate (58%) 35g | 1.2oz
• Oil 7g | 0.25oz
Mocha Buttercream
• Milk 150g | 5.3oz
• Milled coffee 20g | 0.7oz
• Granulated sugar 70g | 2.47oz
• Egg yolks 70g | 2.47oz (from about 4 large eggs)
• Butter 226g | 8oz (2 US sticks)
Dark Chocolate Ganache
• Couverture chocolate (58%) 300g | 10.6oz
• Heavy cream 300g | 10.6oz
Dark Chocolate Glaze
• Couverture chocolate (58%) 150g | 5.3oz
• Oil 30g | 1oz
Chocolate to write on a cake (Optional) * You can also use the extra chocolate glaze!

I am a beginner and I often get lost when it comes to buying baking supplies such as pan and cake tin ... Especially regarding the size . For example for the opera cake that you made which size for the sheet-pans to use for a small sized cake. i always loved the name. OPERA CAKE. Because it so perfectly fits and describes it. Its like an opera. Something so sophisticated, so pompous, so exclusive. An opera takes hours, and its usually an epic about something serious. Its complicated, elaborate and precise. And thats what this cake is. Not something you make every other sunday. ITs something you make like once a year for a special occasion. An absolute trial of skill, a cake complicated as hell, and after the hours, eating is like the Crescendo of the opera

Although, I'm seeing many people calling it the 'king of chocolate cakes', yet there seems to be much coffee and relatively little chocolate, is it not overwhelmingly coffee? Would you say this cake is a good option if looking for a chocolate birthday cake? Also, in case I am going to be trying this out, could you specify what percent fat was your heavy cream? Where I'm from we rarely have anything above 33%, so I was wondering how I should compensate if yours is above that. Would just adding more chocolate work to thicken it? And one more, how much of a difference do you think the cognac makes in the syrup? I'm thinking of making this for a birthday and there will likely be kids eating it so I'm not sure adding cognac would be appropriate (though maybe boiling it for a bit to cook off the alcohol is an option?). EDIT. This turned out to be a lengthy comment in hindsight 😅 Hope you don't mind me bombarding you with questions like this.

Hey aya. Almond flour is really expensive here. I however have homemade almond butter. Can I use that instead ?
Tis magnificent video and tutorial. Really enjoyed watching the video, almost as much you enjoyed your first bite. On the serious note. When you said "oil" for chocolate. What kind of oil? When I experimented with chocolate there was four ingredients that put chocolate flavours out more. Vanilla, salt, coffee and olive oil. Are you using neutral oil or olive oil for chocolate?

It's safe as it's heated enough to make the coffee anglaise sauce. But if you feel concerned, I recommend using pasteurized eggs.
