I honestly believe Illagers split from Villagers during the evolution tree. Then years later the Witches split from Villagers. That could explain the arms. Although Minecraft Legends completely wrecks my theory, it’s still fun to think about.
I really do wonder how it would really look irl though. Minecraft does take some creative liberty on existing animals, so you may need to stretch the imagination a bit with any mob really, which [insert mob] irl art sometimes miss.

I like this theory! I love the fact that you took a real life example of evolution, and Incorporated it into Minecraft! Btw, I think villagers just use emeralds as a currency for the same reason we use dollar bills (or whatever currency you use). The only things emeralds can do is things other ores can, or things that villagers aren't advanced enough to understand (like acting as a beacon piramid). Likewise, dollar bills are just slips of paper, and don't have any use besides functioning as a currency. This is what separates emeralds from iron or diamonds, which have many uses. This would make sense if your ender pearl theory is correct (which I think it is). They're all valuable because they're worthless
And players use diamonds over emmeralds or gold as currency, for the same reason somone may use gold or silver over paper irl: because the former can't be created artifically and thus is resistant to inflation.

I think that the villager has a long nose to appear more threatening/intimidating a lot like how a cat tries to make itself appear bigger when under attack, the nose as you said is the probably the first feature of the villager that a potential hostile would notice meaning that if this where true that would mean that the original zombies would have not attack the villagers in fear. Then the nose was probably passed as a genetic trait. Zombies will attack them now because the knowledge that the nose is not a weapon has probably been passed down through the generations, brain-hungry creature to brain-hungry creature. This would also explain the noses on the iron golem and ravager, which could be there for intimidation. I'm just a kid though and this is all just speculation

I thought the villagers evolved from pigs, more specifically pigmen. Their nose is actually a trunk adapted from their snout that use to communication instead of only smelling. That's why they don't have hair, because pigs also don't have. I also believe that their villages and the iron golems weren't build by them, but by instead the ancient builders to help them survive, mainly because villagers are never shown to able to build stuff. And in trade for shelter they would perform labor for the builders, but collecting the crop and creating weapons.

The NPC and the agent also has big nose. You can get the NPC and the agent in the special edition of minecraft which minecraft education edition but you can also get them by commands in other editions but the agent don't naturally spawn though so I recommend using the education edition if you are interested

Ravagers might have noises to fake villager mating noises like how a cyclops mimics voices to lure in prey and iron golems might have same nose to make it feel more natural to the villagers or to counter a ravagers voice
i think the villagers noses are how they communicate. those “hmm” noises they make are their actual language. their nose and mouth are separately connected, ie they can only breathe through their noses and eat through their mouths, and so to vocalize their noses can modulate their exhalations to produce different noises. their noses are so large to support the series of flaps and valves that let them make their noises. i also think the difference between villager and illager noises indicate a difference of language.

In the minecraft dungeons book the rise of the arch illager, it says that the villagers arms are stuck together because it is their way of showing that they are peaceful so they have 2 arms and not 1, maybe that is also why the villagers in minecraft have what looks like interconnected arms
