    • that is really too much. The light soy sauce and msg together would just make a very salty fried rice and the sambal actually is sweet and salty too.he need to add the remaining rice to even out the salty rice.I doubt he could eat it in the end.

  • That's actually what we always do at the Indian supermarket - go to the aunties and ask them which is the best brand of rice / steaming pot or whatever, they give great advice and are happy that younger people are interested in their cuisine.

  • While the first shot has Vincenzo slicing the garlic, when he adds it into the wok, the garlic is properly chopped. I think Vincenzo just used a single scene of him slicing for editing the video. He still chopped it properly

    • Yah, but if you really want to chop it finely enough, you smash it with the side of the cleaver which does most of the work, and then you choppity chop the mash. You don't need to slice it in this context (though in other Chinese dishes, you might slice the garlic).

  • Sliced garlic in fried rice is actually really good, especially if you fry the garlic first until slightly brown and crispy. I see it mainly in Japanese-style fried rice.

  • A quick way to tell if this is a real chef or not by seeing if he is really respecting different cuisine cultures and willing to make efforts to do research to understand those cultures. Fusion doesn’t mean to twist things to just follow your own standard. That’s not chef. That’s money grasper. Looking from this way, Chef Gordon Ramsay & this Chef Vincenzo really earn the name of “A Chef”

    • I would argue that what differentiates a chef from a cook is the ability to develop and create cuisine rather than just follow existing recipes. If all you can do is emulate well but can't do anything original, that makes you a good cook but a worthless chef. That said, modern professionally trained chefs (especially "Anglo-Saxon" ones) tackle everything from the perspective of flavour theory and a more "scientific" understanding of technique, which means that more subtle cultural elements gets ignored. Gordon is as guilty of this as anyone else, just have a look at his abortion of a Carbonara video...

  • "Is that some Italian cooking technique or something?" Actually, it is! Frying the garlic in the oil infuses the oil with most of the garlic flavor, and the resulting garlic chips end up with a very mild, roasted garlic flavor that serves as a crunchy element in the final dish.

  • Very happy to see this video, and it's antecedent video for a rational egg fried rice solution. I have tided up my own steps with tasty results very much surpassing my previous egg fried rice attempts. All credit goes to the two OG posters, thank you! Vincenzo "proves" that a basic traditional recipe is clearly superior, and worth adhering to without fiddling. And Uncle Roger helps sort through some maybe minor, maybe major, garnishing issues re soy et al. Plus the fact that too much rice, or too much anything, can overbalance the overall effort.] And balance is important here, as Uncle Roger has said many times, and I have taken it up as my own mantra. This may even be a good dish to prepare new i.e. young and starting cooks about proportional ingredients with a fairly complex but understandable taste mix and impact? Teach a 13 year old to cook this good fried rice consistently, and they will definitely carry some lessons into their cooking future. Whatever, I'm no chef, nor even a good cook...but seems useful as a teaching tool. Who knew? I usually add more veg...like a bell pepper...so that goes in after the garlic/onion to help leach out it's moisture. And I use whatever is on hand, so if there's no chili pepper, than gojuchang, or similar chili paste, is getting used. Same with every ingredient...no going to the store to find 1 ingredient, substitute from your pantry and move on! I also add dashes of soy/fish sauce/oyster sauce towards the end if dryness is detected. No MSG. Period. That is quite simply an unnecessary crutch, and one that literally causes me unrestful sleeps following its ingestion. If you want to simulate the MSG effect without actually buying MSG, just add a crushed bouillon cube, or a salt infused herb mix from a shaker, or something like Vegeta, Croatia's popular substitute for MSG. It's all just salty+ flavour, at least in my opinion, that is easily subbed with things on hand.

    • Yup, Zojirushi is the Rolls Royce of rice cooker. Don't need to buy such expensive ones. Decent brands like Tiger, Mijia and any mid range Chinese or Japanese rice cooker will suffice. Also when cooking with Chinese soya sauce or whatever sauce and oil, don't add them directly. Splash it to the side of the hot wok. It will cook and change the flavour as well allowing even distribution.

  • This spatula is correct for normal asian home cooking. With the round ladle you really need skills like Chef Wang in order to flip the rice onto the ladle because its really awkward to take out the end result otherwise.
