  • A traditional way to grate a wasabi is that the chef of a sushi place at Ginza used shark skin to grate it. I didn't really fully understand but apparently shark skin has a bumpy but somewhat smooth skin texture that works well with wasabi. He even demonstrated with a zester grater and shark skin. The one that was grated with shark skin was much more "spicier" and really violated the nasal area lol. I'm late to the Clarkson's farm party but that's probably a big gamble to grow real wasabi apparently because growing wasabi is delicate to the weathers or something.
