4 kg chicken drumsticks and wings
4 tsp salt
I added 1 teaspoon of salt to 1 kg of chicken
Black pepper
1 ½ tbsp paprika powder
4 tbsp apple cider vinegar (6%)
4 medium onions
A bunch of parsley
½ tsp salt
Mason jars (1 liter)

1.5 kg pork belly or fatty pork without rind
About 1 kg of pork fat
About 10 cloves of garlic
Mince the meat with the fat and garlic in the meat grinder
3 medium onions
2 tsp salt
½ tsp ground fennel
2 tsp black pepper
2 tsp marjoram
Add ½ bay leaf

Then turn the oven on to 160C, high/low heat
Bake for 2 hours once the oven is heated
Let the jars cool in the open oven for 10-15 minutes

The pork preserve will be a great, "sausage in a jar" as we call this particular type of preservation, dish to be shared and enjoyed and family and friends. I love that this particular dish is spreadable on bread and can last for a long time.

Thousands of farmers across our region are suffering agricultural damages and livestock losses. Most are forced to cull and sell their livestock to avoid huge losses. Again, thank you for your concern as many people, especially younger generations, do not appreciate the work of agricultural workers.
