Bo-ssam is a traditional Korean recipe that's a pouch full of delicious stuff! It's super-tender flavorful pork, hot red spicy oyster radish, and subtly flavored fermented shrimp wrapped in a crispy pickled cabbage leaf.

  • When I was kid. I often visit my grandma's house and she made bossam for me. But as kid, i prefered junkfoods like Mc,KFC. Now I'm grown man. I always miss my grandma's bossam. Even my mother can't make same flavor. I just watched ur video and cooked. OMG It's almost same flavor that my grandma cooked for me!!! I'm literally crying. I miss my grandma so much.   • Maangchi, my sweet little hammer. I am from Angola and had lived in exile for many years when I was invited back to visit my old country. I met Koreans as presidential guard instructors and from outside their house always smelled strange for all the passing outside. I was told was their food. My bodyguards thought I was crazy to send them over and ask if I could taste a bit. I received a recipient with some red cabbage with a strong smell. I tasted and I was in heaven! WOW WOW!!! I loved it! KIMCHI! I returned to Europe and went often to the only existing Korean restaurant where I lived, called Arirang and run 100% by two lovely sisters. I emigrated to the USA. One day I stumbled on KZhead and one of your earliest shows. I learned to make kimchi and after, Korean food. So healthy, simple, tasty! Your book came out. I bought 10 and send them as gifts to my friends overseas. GOD took pity on me and in this town there are now 3 Korean shops. I go there very often! Expensive but worth every penny. My larder, my freezers and my fridges are is full of Korean staples! I read your ancient History and know all about Korea. Saw all historical films and know all about your culture. Next reincarnation I want to born in Koryo or Gugoreyo or Bakje but not Shilla! Of course, as a royal or scholar, that bone rank thing, nah... How I love Korean ancient History. My sons love Korean food. Asian food is a normal thing in my household since child because of Macau and Timor, plus the influence of Japan in Portugal’s food, but never Korea. Please come to the Midwest with your show, I want to hug you! One thing I never tried fresh, ginseng! I wish I could find it here so I would cook your chicken :( Hug to you, my darling, may GOD bless and keep you safe always. Thanks!

    • Wow, what s fantastic story you have ❤ My Mom is from Korea & our family history traces back to the Silla dynasty 😂 I just visited my family in Korea this past November & had such a wonderful time. I hope you get to visit too. Maangchi reminds me of my Mom (the way she chops everything & her hands). She's does a lot of meet & greets, I'm sure you'll get to meet her one day.

  • Maangchi I tried your recipe tonight. I am still cooking but the smell of the pork is so delicious. I also tried eating the napa cabbage I am pickling, it is so crunchy and delicious. I have to stay away from the napa cabbage. I might eat it all before the pork is cooked. This is delicious.

  • I first saw bo-ssam in a K-Drama. I finally made it to Seoul in 2015, it was one of my first meals, accompanied by a bottle of soju. When my vacation ended and I went home to Canada, it’s one of the first recipes I tried to recreate but unsuccessfully. Luckily, I found your recipe. Bo-ssam is the first thing that comes to mind when I see pork belly in a butcher shop.

    • Everyone's bossam & jok bal recipes are a secret family recipe & they're all different. My Eomeoni also puts in apples, jujubes, orange peels, & coffee, plus all of the other ingredients. She boils it twice to get rid of the gamey smell & taste before seasoning on the third boil. I'm glad you can reminisce & feel your Mom's love with Korean food. I'm sure she's right by you, watching you cook & enjoying the memories with you ❤

    • Many Koreans were exiled to Uzbekistan & Kazakhstan by the Russians when they escaped the Northern Korean Communists that invaded. I was taking care of my ex's Grandfather & an agency nurse who was covering my weekend didn't speak English. She was from Russia but she was Korean 😂 I'm half Korean, so we could communicate by speaking Korean.

  • Annyeonghaseyo! I lived in Suwon for 4 years. There is one store that sells bossam in na tusirak. I would say it is one of my favorite 한국음식. Now that I'm back here in the Philippines, whenever I miss Korean food, your channel is my reference in preparing Korean dish by myself. My friends can tell the difference of the kimchi that I make following your recipe. Although I attended kimjang events, it is your recipe that aided me in making my kimchi.

  • Hello Maangchi. I made the pork tonight, along with the horseradish side dish. They are both so good that I had to force myself to stop eating. I had to substitute the brown sugar and soy paste with regular sugar and a bit of soyu sauce but it still came out amazing. Even my hazelnut coffee was not instant. I didn't realize it was ground until I got home. Anyways, I cannot wait to cook this for more of my family. You're the best! Korean restaurants are rare here in my area of Michigan so it's really nice to make Korean food straight out of my kitchen.

  • I made this recipe for my girlfriend, but I used another type of cabbage, mussels in stead of oysters and carrots in stead of daikon. It turned out delicious! :) I saved the stock and made your cabbage and soy bean paste soup with it the next day.

  • the water you used to cook the pork must make an incredible stock for some hearty soup or stew? amazing....

    • Actually, the coffee granules makes the water less 'recyclable'. If you want to reuse it as a stock, you can use green onions, bay leaves and peppercorns instead, to remove the smell

  • 저 정말 깜짝 놀랐어요 저 헤이즐넛커피 몇년전에 선물 받아 냉동실에 넣고 저도 보쌈할때 넣고 있거든요. 저게 맛을 좋게 해준다는 생각 없이 아무 인스턴트 커피나 넣으면 돼지 잡내를 제거해주겠지 싶어서 넣었던건데, 망치님이 저 커피를 꺼내드는데 진짜 깜짝 놀랐네요. 생각난김에 조만간 보쌈해 먹어야겠어요^^ 항상 잘 보고 있습니다.

  • Ok, I made it today (sans squishy oysters... I added another pour of fish sauce to the daikon for moisture.) Guys, this is a fabulous dish, just delicious and Maangchi is right "Little Sweet, Little Salty, So Delicious" LOL It took me three hours to prepare this whole dish from start to serving, because I am a slow chopper and those daikons took long to cut. Mandolin would be too fine, I wanted the crunchiness so cut it like fat matchsticks. I found everything at our ONE Asian store (there is no Chinatown or KTown in Hilo) except the instant Hazelnut coffee. I finally found it at our Long's (CVS) It is the Taster's Choice instant tubes... I really love that salty shrimp sauce also (found the jars in the frozen section of the Asian store.) This is the kind of dish to serve to your best friends, where you huddle around a table, reaching and grabbing, and drinking beer. It was hot for us, so I added a spoonful of hot rice to the mixture, wrapped the whole thing in the delicious pickled Napa, and popped it all in at once, just the way Maangchi showed us! Really a great dish! Kamsahamnida, Maangchi!
