Creamy Tuscan Chicken in a light and satisfying parmesan sun-dried tomato cream sauce.

TUSCAN CHICKEN INGREDIENTS:
►2 large chicken breasts, halved (1 1/2 lbs)
►1 tsp salt, divided, or to taste
►1/2 tsp black pepper, divided
►1/2 tsp garlic powder
►2 Tbsp olive oil, divided
►1 Tbsp butter
►8 oz mushrooms, thickly sliced
►1/4 cup sun-dried tomatoes (packed), drained and chopped
►1/4 cup green onion, green parts, chopped
►3 garlic cloves, minced
►1 1/2 cups heavy whipping cream
►1/2 cup parmesan cheese, shredded
►2 cups fresh spinach

  • I made this the other day for my family! OMG! It was so delicious! The spinach, mushrooms, sundried tomatoes --the flavors blended so well, and that sauce! Now that was divine. I served it was homemade mashed potatoes and no leftovers! Definitely a keeper! Thanks Natasha!

  • I made this for dinner after watching the video today. It is amazingly good. I didn’t have any spinach in the house but I had everything else so I substituted broccoli florettes for it. It was amazing. Served it over egg noodles and my picky husband even liked it. Thank you for such a great recipe and please keep sending them.   • I’ve made this several times as it is a favorite for us and not that hard to prepare. Ei roast cherry or grape tomatoes with olive oil and s/p in the oven in place of sun-dried tomatoes and sometimes substitute chopped kale for the spinach. So good! Love your videos and recipes!

    • Yes, you can. It’s best fresh but it also reheats well if you make it ahead. (see my reheating instructions in the blog notes)

    • I make this every week! It’s our favorite ❤️ We aren’t fans of mushrooms, so we substitute it with bacon!! I suggest adding bacon anyway, it really takes it to the next level! You’re welcome 😉
