Shallot Pasta (Alison's Version) | Home Movies with Alison Roman

Caramelized Shallot Pasta, a pantry pasta that is better than the sum of its parts (although the parts are good, too). The two best pieces of advice I can give you while making this are to take the shallots to a more frizzled, caramelized place than you think (do not be afraid!), and please, whatever you do, do not skip the garlic/parsley topping. Re: the half of the shallot paste, save it for more pasta. Spread it onto buttered toast. Spoon it over scrambled eggs. Sautee your shrimp in it. Put it on an avocado. Give it as a gift. While I can technically say that the paste keeps for up to six weeks refrigerated, I can also say that I have kept my shallot paste refrigerated for up to two months and counting.

  • Moving apartments can definitely leave you feeling wrecked. It's not just the walls and the floors and the decorations, it's that they demarcate times of your life that likely contain a potent mix of emotions, which all come back when you are saying goodbye. Hello emotions! Congrats to you Alison for weathering the storm and still making this last beautiful farewell video! I will miss this apartment but am excited to see the new one : )

  • I really appreciate how doable your recipes are for the average person. Like my kitchen is probably even smaller than yours (though an upgrade from my first efficiency, which didn’t have a kitchen so it was just me in a 100sqft bedroom with a sink, mini-fridge, toaster oven on the floor w/a single burner hot plate on top of that), and I think it’s the most realistic way to develop recipes that normal people can make. Like most of us don’t have super elaborate commercial kitchens to work with and I appreciate that I can always make your recipes :)

    • Agree!! That’s one thing that was hard about Bon appetit even though I loved their content and recipes, they often involved crazy utensils that I do not have, or they involved lots of moving pieces that you needed different worktops for which the average person doesn’t have. I think that’s why alisons videos appeal to the average person, aside from her humour and fun personality, her recipes truly are simple, healthy and delicious ❤️

  • I have made this shallot pasta SO, SO MANY TIMES last year and of course this year you have no idea! It has been one menu or dish that has been saving me during lockdown especially. Thank you, you have made me, a person who used to hate shallots, eating shallot pasta literally to a point every single day for almost one month during lockdown. And yes i do wear contacts lenses and yes i purposely ONLY peel those shallots whenever i’m wearing my contacts lolol.

I had a 1950s refrigerator that I had to thaw out regularly. I will miss your little apartment as it was so you! I hope the next place will be just as charming. Can’t wait to see your next video!   • Since the start of the pandemic, cooking has become something I've really become invested in and enjoy, and I think it's no exaggeration to trace the start of it to making this shallot pasta last spring. It was one of the first things I made that really felt magical, for lack of a better term - a real dish that was more than the sum of its parts. It felt like alchemy, is maybe the better term for it, and it still impresses and surprises people when they find out that it's mostly shallots, anchovies and tomato paste. I've since made many more of Alison's recipes and bought Nothing Fancy and also cooked tons of stuff on the smoker I bought and being on this journey of learning and making good food has been truly rewarding both for me and my family over what's been an often rough 15 months. So thanks. I will keep watching.

  • This recipe is everything, I think I've made it 100 times (and will make it a million more). I've played around with varying quantities of capers, miso, and Marmite as vegan subs for the anchovies, all work well. And I'm living for the Taylor reference - they've got your past frozen behind glass, but you've got you!

  • I still come back and watch this, although the programme has obviously moved on. I love this little kitchen and all the happy times implied in the videos made there. The friends and family who've gathered there, the challenges of squeezing them in, relationships that came and went and those that stuck, the jokes and ribbing and laughs, the culinary feasts, the flops and tough days, and getting the freezer to shut when not another stick of butter would fit -- but somehow it did. It's authentic, charming, unique. Just like Alison.

  • Jumped on the bandwagon a bit late, but this pasta is oh so worth chopping a mountain of shallots for. Made it a bit fancy by using a can of the precious Spanish anchovies I bought while on holiday. Takes me right back 😊 thanks Alison for this delicious and simple recipe!

  • I make this weekly. It's the BEST!! I follow the recipe as written and never go wrong. I save the other half for the following week. My grandson makes it also, but he uses the ENTIRE recipe on a lb. of pasta. Plus, I do add a sprinkle of parmesan!! DELISH!!
