    • Absolutely it’s a good habit to have but the main reason for this, and any chef using a VERY sharp knife, is to ensure the food is stable as possible on the table to avoid slipping out while you’re cutting it and potentially losing a finger or too 😅✌️

  • Like watching a doctor perform surgery. Knowing everything and the steps needed, the keeping everything sharp, clean, and minimizing extra steps. So many of us would not be able to do this and would butcher it and waste so much of the meat. It's impressive and shows how much experience that these guys have. The very sharp tools also helps, along with that curved blade. First time I've watched someone cut up a huge tuna with a curved blade, has always been by one of those big, long blades more like a butcher's knife. It was also cool to see him scale the fish with the blade as I've seen others who quarter the fish, then remove all of the skin from the filet. It's a cultural thing as Japanese and other Asian cultures try not to discard the skin and usually use it. Many Americans will not deal with the skin or eat it. Many Americans will just have filets which are skinless, and also bloodless. Many cultures will eat the blood parts as well. Also interesting to watch him cut certain parts like the parts of steak where you have the loins, the tenderloins, the filets, the rib eye etc. This was very will made video and interesting to watch.
