The Pearl!

I wanted to create one last summer inspired dessert all about coconut and vanilla!
It is composed with a coconut Joconde sponge soaked with a Malibu and rum syrup, a coconut long lasting foam.
Inside the Pearl there is a vanille coconut coulis, a coconut cremeux and a light coconut mousse.
The whole dessert is trapped in a very thin layer of white chocolate.

  • I remember eating those chocolates given to my mom by her cousin and it's all different seashells and a seahorse. 💜 It was hard for me to eat it because it was so pretty. 😭

  • Your creativity is exquisite and I admire you. It was especially unexpected when you printed out a mold from a scallop shell on a 3D printer, so far I only have the opportunity to make molds from silicone. I will be glad to learn something from you. Thank you for inviting me to the course.
