My mum used to make this 40 years ago and she called it 'Mother's Disaster Cake'. Every time she made it something went wrong. She used toasted hazelnuts instead of almonds. Sometimes the meringue fell down in the middle, or rose too high, or one side was up and the other down, or it was slightly over cooked and had a slightly suntaned appearance. Occasionally the jam was too runny, or she didn't have time to pipe the marscarpone and dolloped it on. Always something wrong, but it tasted wonderful every time. She would look at me over her glasses and say, "Would you like a disaster for your birthday?" And the answer was always "Yes, please!"

So true! I would imagine that many yummy desserts came from a failed Pavlova, lol! Cook the merengue too long? Crumble it up and mix it with the whipped cream and berries, tah dah, Eton Mess! So many possibilities!
@Been around the block or 2 Yep, she used jam, but only homemade. She never possessed store bought. Huge jars of homemade jam. Occasionally we'd run out, then she'd need to make a 'Disaster' and do the jam a week before. Lol. Busy mother.
@Been around the block or 2 No, I was mainly referring to what constituted a disaster. One could use anything that they wanted to. A nice jam from anywhere would work. Even if it's too runny the whole thing is still lovely, but becomes a disaster, lol.

The German version is made in a tube pan. Cool upside down. Slice into 2 layers. Whipped cream between layers with sliced strawberries and bananas and the same on top. No nuts. Delicious!
Thanks for your comment! Many folks don't realize that a Tube Pan can be substituted for almost any cake. Tube Pans are large, the bottom comes out, they hold a large amount of batter, they cake can be split, it can be used in place of a loaf pan.... A Tube pan is something I use all the time 🥰

I use them for foam cakes like angel food, chiffon, and shortcake, but never thought to use it for a meringue cake...Derp. This recipe just became a lot more interesting with that one technical change. Thanks to @joanspicer4986 for the slight recipe change!

What i find fascinating is that you can prepare it outside. Are there no bugs in your part of the world? The aesthetic of making it outdoors is glorious and i am BEYOND envious. My grandmother made a cake similar to this. It was 4 layers of meringue very thin layers. Between each layer was a whip cream and fruit cocktail mix. She also frosted the outside with whip cream and then burnt the meringue.

Thats so fascinating to me that one would put all that work into something to use fruit cocktail but then they did that then didn’t they? It doesn’t work in my head but thats why i try to learn new things all the time. No one baked better than one of my gmas and she absolutely used fruit cocktail in salads and things i just cant idk y? 😂

This a dessert from New Zealand it's called Pavelova! We make it a little differently. We use castor sugar. Vinegar not lemon and we add vanilla essence. Don't split the mixture, don't add almonds either. Whipped cream is applied and either kiwi on top. Strawberries. Or sliced bananas with chocolate flaked ontop of bananas.

Hello! Very nice video! It reminds me of a Pavlova “cake”. It’s made with a bottom and top layer of merengue, with whipped cream inside, and fresh fruit. Sometimes they even put the whipped cream on the top layer and decorate with more fruit. Or they use a fruit jam as well. I’ve seen some that Nigella Lawson made on her show many years ago! She used passion fruit! I liked how you added the sliced almonds that got nice and toasty in the oven! Thanks for your video! 🙏🏼💖

Очень понравилось, что здесь сахарной пудры в 2 раза меньше, чем для меренги, от этого торт ещё вкуснее, спасибо за рецепт! Я делаю торт с кремом из сливочного масла и немного сгущёнки, добавляю сухофрукты, лайм и кедровые орешки. Ваш рецепт теперь будет в моей копилке 💚

I have been looking for this cake recipe for years. I learnt it in my summer pastry class. However it was called an 'Icebox cake' in the Caribean. Instead of raspberries we used Maraschimo cherries. It was mouth watering. Thank you for honouring you mum and also rekindling my childhood memories

This is pavlova right? Very common in Australia and New Zealand. I love it. Sometimes me and my sister bake it when we feel like having one because it's hard to find it in bakery shop

Yeah, that's a fancy pavlova there. I make mine with raw sugar which makes it more caramel flavour. Also a couple of drops of food coloring swirled in gently is pretty too.

la conozco con el nombre de torta de merengon !... y también se la utiliza para hacer las pavlovas, se las hace en forma de canastas pequeñas y luego de hornearlas se las rellena de crema Chantilly y frutos varios, o frutos rojos, con esa misma masa se pone en una manga pastelera y se hace los suspiros, se los hornea a 90 o 100 grados centígrados por 1 hora aproximadamente.
