  • The two biggest things I've learned from Guga that have elevated my steaks is high heat to get a good crust and properly seasoning the steak. I used to just salt my steaks 10-15 minutes before putting it on the grill. Now, I get the salt on (and plenty of it) at least an hour before, if not longer. That's the big elevation.

    • I have found that using kosher salt really helps too. For some reason it the salt flavor sinks in better than using one of those table salt grinders, I have no idea why.

    • If you could you should put salt even a day beforehand, it makes an incredible crust, you can see it in the Gugas video about dry bringing

    • @@bobdonda Yup, always Kosher Salt. I don't know if the grain structure/size makes much of a difference, but I think where it does make a difference is I can more quickly and evenly put it on and know how much I'm putting on. Smaller salt crystals will dissolve immediately.

  • Tried this method for the first time tonight. I’ve tried Gordon Ramsay’s method several times, and several other chefs. But this is by far the best way to get the right crust, and the perfect done-ness. The texture and flavor were incredible! Highly recommend.

  • Guga... You are the man! I have been doing it more wrong than I needed to. The spinning of the grate has eluded me for years. The initial sizzle should have stopped me in my tracks, but it never did. My steaks were close to perfect, but I messed it up in the first 30 seconds. Your method has shown me the error of my ways. More videos like this please. It will inspire more people to reach out of their comfort zone and purchase higher end steaks. They really do not know what they are missing. Cheers!

  • I love videos with more instruction. That's what we're here for. You are the reason I've started buying whole cuts of beef instead of individual steaks. Cut my own steaks make them my own way. Your method of salt, pepper and a little bit of farcical powder is something I've done my whole life. Start with good meat and use less seasoning. But plenty of salt. Seasoning all sides is something I picked up from you. Let me tell you, my steaks went from That's a damn good steak to Holy Cow! That's the best steak I've ever had. Thanks Guga!

  • Thanks for sharing this, it’s awesome (and your steaks always look incredible!). I’ve known about the hot/cold zone for indirect heat but have never seen someone rotate the grate like you did. As soon as you showed it, it made perfect sense - we want the steaks to be cooked by the heat from the fire, not the heat that has been captured by the grate. Unless you want specific grill marks - but this method gives you lots of control over that!

    • Bluetooth grill thermometer. Works like a charm. Get one with an app for the phone, saves you lifting the lid off the grill to check.

    • There are only three thermometers you should spend your time using. The Meater(Wifi version) for long cooks. The other two are Thermapen and Fireboard Thermometer. Trust me. They're so much better than everything else.

    • i just use my finger tbh, people say it doesn't work, guga as well, but i feel like the softness of the touch can tell me how it is, like 70% of the time i get a medium rare.

  • This tutorial style with hints and tips is a great change from the regular format. We can use these videos to further improve our skills in preparing, grilling and serving our food. Please make more of these. They don't have to be an intensive series of episodes, just a departure from the norm. Maybe a burger grill next, followed by other types of meat. Thanks for the amazing work you and your team put together.

  • The cold grate technique really is the game changer when it comes to perfectly grilled steak! I bought a 26"Weber and the Slow n'Sear XL earlier this year and have not been disappointed one bit! Plus with dual zones you can use a kettle like an offset smoker ....let's just say many many pounds of delicious meat have graced my plate this year and my steak game has increased exponentially!

  • This is an AMAZING technique!! I used to think a screaming hot grill grate + grill marks was desirable, but this method blows that out of the water. This builds an even crust more like a cast iron would, but with the additional flavor of the charcoal. It's a win-win!

  • This is a great video, been waiting for so long. After finding this channel and it becoming a staple to watch daily, I have been bbq'ing so much more, I even took it a step further and went to a BBQ course for slow cooking (short ribs, smoking etc). Its such an amazing hobby and still so much to learn! Would love to see more of these videos and even how you cook your burgers.

  • I have to say as someone who has watched your channel since your beginning when sve was considered your main channel. Your production and food eye candy is the best the internet has to offer. As much as I like this format. I'm not sure how your algorithm will move if you put videos like this on the main channel but we as audience members refer to your main channel videos to see sizzling b-roll and your legendary catch phrases.   • This was really interesting, because most *indoor* cooking tutorials suggest using a ripping hot pan, and then finishing in the oven, or reverse searing where you start the steak in the oven, then finish in a ripping hot pan. This seems to suggest that you don't want the metal hot, but rather just rely on the fire and radiant heat from the briquettes. Good to know, and I'll definitely try it out when I'm grilling next time.

    • They switch out who films, and the “kitchen” scenes are often a hard cam with a tripod or first person (being shot by guga first person, which is why he narrates and you don’t see him in the actual shot)

  • I have seen other youtubers cooking ,slicing, ans eaging their steaks. I believe all of them are prodessionals however, i realize that your steaks look best especially when they are cut speaking of inside color, moisture, juiceness. To me, ypu cook the best steaks. AND YOU ARE A very humourous person. Thanks for the video.

  • Great video! You could show how to set the grill up. Gas, charcoal, real wood charcoal, indirect (Holland grill), or good old skillet. I also like cooking on a pellet smoker/grill. They are all different to cook on. I really like these kinds of videos.

  • I use the grill top to control the temperature and make sure it doesn’t char it right away. I do a mix of time with the top on and time with the top off for each side.
