POTATO CAKES Super CHEAP and EASY to make at HOME | Tortitas de papa y Queso Baratas y Fácil

Today, I’m making cheesy Chile verde potato cakes. Crispy on the outside and soft and GOOEY in the middle 😋 Best of all super easy and cheap to make at home, OH YEAH!!
Recipe yields 1 dozen potato cakes. some didn't make it to the thumbnail because my family couldn't resist the crispy goodness!
How do you like to make your potato cakes?
INGREDIENTS
Oil for frying
5 large russet potatoes
1 cup of cooked chicken
2 cups of Chihuahua cheese + Extra for filling
2 4oz cans of diced green Chile
1/2 Tbsp salt (adjust to taste)
1 tsp black pepper
1 tsp garlic powder
3 cups of panko crumbs or bread crumbs
4 eggs
Dip into some Sour cream and salsa verde
* This recipe freezes well and is excellent for easy meal prep
