KFC Canada opened its doors and let customers behind the counter with the world’s first KFC Cooking School. Although KFC franchises around the world have allowed customers and fans behind the scenes in the past, letting the public cook their own meals is a KFC world-first. Everything was revealed except their 11 herbs and spices.
I paid $5 to learn more about the KFC brand and cook my own fried chicken from start to finish. Plus, we were able to devour it too.

  • What they don't show as well is how much a shift runner or manager blames the cooks for every little thing that goes wrong. Don't show how a cook gets told to stop cooking for a bit then getting verbally abused for not having chicken cooked the second they want it also don't show how filthy the back can get during a busy lunch or dinner time rush, which again is the cooks fault according to management. By the way I speak from experience, I was a cook for KFC in the UK.

  • Back in the day in Orillia Ontario @ " The Sundial Restaurant ", the colonel attended the first opening of his KFC with my boss Rob greenwood. I was the first person to cook and run the drive-through. I had 6 hand-dipped pressure cookers running all the time.

  • Gotta say, I am a kitchen hand at KFC and this is semi-accurate although there is ALOT of show put on for this. For 1, we use gloves when breeding the chicken 2 wash our hands almost every 2 minutes, 3 use bare hands to handle the cookers and keep them on "Drop" temp (About 175-180 degrees C), only record chicken temp and times for the OP diaries and some other things, but this is farely accurate. Plus idk about other KFC's but usually music is blaring and the breeding table is 10x more messy xD

  • I worked before at kfc many years ago in the philippines and we dont have that kind of fryer. The kfc in the philippines uses Henny Penny Fryers but some of the methods shown on here is the same in the philippines

  • Those velocity pressure cookers nowadays can handle 26 lbs at a time. I’m thinking that a good comparison would be the marinated birds vs seasoned breaded. Sanders was working with a totally different bird when he started up. Requires longer cooking time and difficult to get consistent browning of the breading. Thanks for the video

  • i have worked in a KFC for a few years, we NEVER and i mean NEVER discarded any product after 90min or any other period of time. some people would get 3h old chicken, if your chicken was nasty tasting/super dry that's why. also NO book to record when the trays come up.

    • its cooked in a pressure cooker for about 20 min so it's basically submerged in oil, it absorbing the oil, that's why its so greasy

    • I started KFC over 4 decades ago - say twice year, Always hot, crispy and juicy, Bought it once a year after that, noticing it wasn't like it once was. Gave up a decade ago and make my own on my birthday with my 6 herbs and spices and in my pressure cooker. Since then, friends and family at social events demand I make mine for them. I get free beer and at times the 'special' chicken = chick.

    • Paul games. I work in KFC and if you don't waste the product after it should be then you're in trouble. And also, the books are gone. Now it's computer that says how much stuff you have to waste and when. The numbers are added to computer automatically as you press the product and quantity on the pressure fryer.

  • It's actually nice to hear a KFC employee speak proudly about the brand. I live in the Toronto area and service is universally BAD here. Employees are generally indifferent, unapologetic when service is slow, they're not polite and refer to their famous Original Recipe as "regular" chicken. You would NEVER, EVER hear that in the United States.

  • Really you would deep fry your food at home by having a pot of bubbling oil over a exposed heating element or flame. some glad nothing ever happens while doing that. :) BUT sounds scary as hell to me. but if someone from KFC is teaching people about safe food handling and food prep and cooking they obviously know what they are talking about.   • The finished texture looks nothing like what KFC outlets used to produce. Combine that fact with the lower quantity (if not absence of) the eleven herbs and spices, and what you're left with is an over-priced product that tastes nothing like it used to. Oh, did I mention the fact there's a dried egg and milk mixture that's added to the breading flour that they didn't bother to mention? The last time I ate KFC from an outlet was three weeks ago, and it tasted mostly of pure sodium. The pieces appeared burnt and the coating was very thin. A total waste of money when better fried chicken can be found elsewhere for a lower price. What qualifies me to say all this? Merely the fact I can emulate the original recipe and texture to a "T". And no, I don't rely on the bullshit "Leaked" version from the Chicago Tribune. My source likely originates from an executive who became pissed off with what the KFC brand has become. I also use a pressure-fryer and a frying medium that consists of canola and shortening blended together. The rest is a solid technique that includes prep, time, and temperature to achieve optimal results.

    • @@markwinston3119 I'd say pretty darn close, especially the texture. To get the classic texture you need to pressure-fry in a mixture of canola oil and vegetable shortening (2:1 works well). As for the spices, there's an obscure list of them floating around on the 'Net. Not many people know about that recipe, and it's the closest one I've found where the flavor of the OR from the 70s and 80s is concerned.

  • First: The production facility makes a special "secret spice" and "other' ingredients in a marinade. This marinade is shipped to the chicken/meat production facility, where the marinade is applied a specific way, for a specific amount of time. The meat is then shipped to restaurants, where it it's prepared, a specific way. Even the manager in this video, has NO CLUE, how the secret recipe works ;-) I have left out even MORE specific details, due to secrecy standards.

    • @@perezdavidangel: The secret is in the marinade at the production facility, where the eleven herbs and spices are infused into the raw chicken for 24 hours - it's not just in the flour or the chicken would taste bland with only the tasty crust. In case no one has researched KFC, the eleven herbs and spices no longer exist - it was reduced to save money and time, several years ago.

I’ve been through RIGOROUS steps working in a SCHOOL kitchen & know of the Health dept coming in & INSPECTING you, personally! They check your nail lengths to make sure they’re flush w/ the top of your finger tips, hair net placement, etc. U cannot even walk on their floor unless u change outside shoes. Bathroom situations are a whole ordeal. It’s MIND BLOWING 🤯 It’s a VERY EXTENSIVE! So when I see vids like this, I’m curious as to what the standards are. U know…my curiosity is PEEKED 🤣😆

  • Everyone seems twacked out y'all must be on some ish up there in canadia. Like the persons foot shaking was irritating in the beginning. The cook guy moving around like he's just itching to batter some chicken, or wait for Canadian dana snyder to stfu. KFC was my second job and it was terrible. I was a cook, nastiest job I ever had. The prep station wasn't grounded properly and if my hands were wet, I'd get a nasty shock preparing the "fresh chicken" We got robbed 3 times while I was there, our little doorbell style alarms under the registers didn't work. I gained about 30 lbs because we could eat whatever we wanted to. We smoked on shift in the restaurant. One time we put leftover nasty ass dark meat chicken in the pissed off dishwasher's tailpipe and he blew his engine because it was packed so hard. He had a heart attack over the stress. It was pure chaos there.

    • Oh yeah, another time a new guy tried to force open the pressure cooker and ended up going to the hospital for really bad burns and also took the back window cashier with him. It was gnarly. Guess it was my fault for not telling him, but I was 15 and wasn't trained properly either. The store burned down a few years after I left and got rebuilt into something called "freddie's burgers". 90 minutes my ass, we were told to hold until it got sold.

    • The flour comes in large bags which we add first then we add the spices which are in bags also to the mix then hand mix and sift through it once

  • I wanna try Canadian KFC cause the USA 🇺🇸 KFC original is disgusting these days. Super oily and cheap tasting now like they left out a few herbs and spices or didn’t cook it right lol. It’s seriously not good in the states anymore. It used to be amazing in the 80s and 90s. My stomach hated me for it last month, the original never tastes the same like it once did and now tastes like cooked in gutter oil or something.

  • good video, it didn't show how often the cook has to wash his/her hands. After the chicken is breaded, aren't the hands washed again before the gloves are put on? I didn't see the cook wearing a hairnet, only a baseball cap. why aren't latex gloves worn instead of bare hands, aren't there latex gloves long enuff to use in place of always washing hands and wut about towel lint being transferred onto the hands?
