・1 tsp Curry powder
・1 tsp Oyster sauce
・1 tsp Sake
・1 tsp Sugar
・2-3 tbsp Potato starch
・Oil for frying
Soup
・1.5 cups (350ml) Water
・1 tbsp Soy sauce
・2 tsp Oyster sauce
・1 tsp Chicken stock powder
・1/2 tsp Sugar
・A pinch of Garlic powder
Topping
・Spinach
・Minced green onion

・4 oz (110g) Ramen noodles (raw)
Chashu (imitation)
・1.4 oz (40g) Pork belly
・2 tsp Sake
・2 tsp Soy sauce
・2 tsp Mirin
・1 tsp Sugar
Soup
・0.8 cups (200ml) Water
・0.6 cups (150ml) Milk
・1.5 tbsp Miso paste
・1/2 tbsp Chicken stock powder
・2 tsp Soy sauce
・2 tsp Mirin
・1 tsp Sugar
・1/2 tsp Grated ginger
・1/3 tsp Grated garlic
Topping
・Minced green onion
・Red pickled ginger (Beni-shoga)
・Nori seaweed

Ingredients [for 1 serving]
・4 oz (110g) Ramen noodles (raw)
・2.5 oz (70g) Ground pork
・2 oz (60g) Bean sprouts
・1 oz (30g) Chinese chive
・2 Eggs
・2 tsp Sesame oil
・1 tsp Minced garlic
・1 tsp Minced ginger
・2 tsp Doubanjiang (Spicy bean sauce)
Soup
・1.5 cups (350ml) Water
・1.5 tbsp Soy sauce
・2 tsp Chicken stock powder
・1 tsp Sugar

Ingredients [for 1 serving]
Chashu (about 10 slices of chashu)
・1.3 lb (600g) Pork belly
・Salt and pepper
・2 tbsp Oil
・1.25 cups (300ml) Water
・0.4 cups (100ml) Soy sauce
・0.4 cups (100ml) Sake
・4 tbsp Sugar
・1 oz (30g) Ginger slices
・2 cloves of Garlic
・Green part of green onion
・4 Eggs
Shoyu ramen (Soy sauce flavor ramen)
・4 oz (110g) Ramen noodles (raw)
Soup
・1.5 cups (350ml) Water used to boil chashu pork*
・1.5 tbsp Soy sauce
・1 tsp Chicken stock powder
・1/2 tsp Sugar
・A pinch of Salt
*If you don't have water used to boil chashu pork, please use water and 1 tsp sesame oil.
Topping
・Minced green onion
・Menma (Seasoned bamboo shoots)

・1.7 oz (50g) Ground pork
・1 tbsp Minced green onion
・1 tsp Sesame oil
・1/2 tsp Grated garlic

・1.5 cups (350ml) Water
・1.5 tbsp Miso paste
・1/2 tbsp Chicken stock powder
・1/2 tbsp Sugar
・1 tsp Sake
・1 tsp Soy sauce
・1/2 tsp Oyster sauce
・A pinch of Chili pepper

・Bean sprouts
・Corn
・Green onion
・Boiled egg

  • Love this video! Been wanting to make homemade ramen without so many of the extra days it takes for some of the broths haha 😅. Also I noticed at 12 mins or so you do what i believe is called a "cartouche". Seen it done once or twice at my restaurant but always with parchment paper. Basically just helps with keeping in moisture while boiling something. Thanks again!

  • Love this quick and easy tutorial ! I made the shoyu ramen with chashu and it was amaaaaazing ! The only problem is I haven't mastered the perfect ramen egg yet, as the shells stick, so they looked weird.

    • I found the older the egg, the easier it is to peel! Try using eggs you’ve had in the pantry for a while and icing the eggs for 5 mins before you peel them

  • Thank you for this episode! Ramen is my favorite food and I’m tired of buying store bought because the soup base never tastes as good. I like you added actual ramen soup or char siu pork recipes. Tonkotsu ramen is also my favorite. I wonder if you have a recipe for TanTanMen?

  • 밤에 돈코츠 라멘 배달하는 곳이 없어서 ㅠ 직접 해먹으려고 레시피를 찾다가 들어오게 되었습니다. 돈코츠 라멘 따라 만들어봤는데 진짜 비슷한 맛이 나네요? 굿굿🎉 저는 집에 미소가 없어서 한국 된장을 대신 썼어요. 한국된장은 미소보다 짜니까 조금 덜 넣어야 됩니다. 그리고 생강도 집에 없어서 마늘로 대신 넣었구요. 그래도 제법 비슷한 맛이 납니다! 국물에 돼지고기가 전혀 안들어간 돈코츠라멘! 오히려 좋아 이런 레시피 개발하고 공유해주셔서 감사합니다❤😘

  • Because some restaurants took the short cut and put milk to make tonkatsu ramen that I almost die. I’m allergic to dairy products and I didn’t realize that they put milk in the both. That scarred me so bad now I can’t even eat Tonkatsu ramen anymore 😢but I’m going to try the other recipe. It look so good❤

    • In real ramen shop, milk is usually not added in tonkotsu ramen, so please try it when you come to Japan. (Please ask stuff there just in case though) Anyway, I'm happy you liked the other recipe. I would be happy if you could try them!

    • Thank you so much for watching it! You can use cooking sake too! Mine is drinking sake. The brand name is "Sho Chiku Bai 'Ten' Sake". www.wine-searcher.com/find/sho+chiku+bai+ten+sake+japan/1/japan I just buy this because this is the cheapest one so far. 😁 As for storage, since cooking sake contains seasonings other than sake, it is better to keep it refrigerated. While, the sake I use is always stored at room temperature. (Others may have a different opinion.)

    • Thank you so much! I think miso made from rice koji is most common and popular miso in Japan as it matches various dishes. I use it for everyday use (miso soup), and also used in tonkotsu ramen. For example, like this one here↓ amzn.to/3VcoeXX You can use miso that is easily available!

    • @orange the visiting cat Thanks for your comment! Yes, I recommend it :) I like to use miso with dashi for everyday use because it's easier and saving time. I often use it in dishes other than miso soup, as the dashi broth in it gives it a rich flavor. It is your choice, so any miso can be used with or without dashi.
