Super shiny mirror glaze | Beginner-friendly recipes
In this tutorial I will show you how to make a super shiny, red mirror glaze that is perfect for beginners due to its elastic consistency. I am glazing in real time so that you see how it drips!
The key to mirror glazing is to have a good base recipe and ideally an immersion blender!
This recipe is only 5 ingredients and yes, it calls for glucose and gelatine because in my opinion this is gives you the best consistency for a glaze that will stay in place when you glaze a cake! There is nothing worse than seeing it drip without sticking.
There are sooo many tips in this video (sound on), from avoiding air bubbles, cake prep and textures.
I decided to make a heart shaped mousse cake and cover it with a vibrant red colour, but you can use any shape and any colour you want :)

10g gelatine
60g water
150g glucose
150g sugar
75g water
100g condensed milk
150g white chocolate
I used 1-5g of food colouring

I've been wanting to try this recipe & love how you show the steps. I have a Knox powder gelatin (is this ok?) & gel sheets (how many would I need for this recipe instead of powder?}.
I’ve just made this glaze. It was super easy. The only problem I had was getting it down to temp 32°c as room temp was 36°. I put it in the fridge to cool, then had to work very quickly pouring it and get the cake back into fridge to set. It looks good, thank you.

Hello! you mean like Jello? that has some sweeteners so I'm not sure how much actual gelatine would be in each tsp for example, but its probably not 1 to 1. Maybe someone has found out about this already

Ideally yes but it can hold outside for maybe a couple of hrs , depending if you cover a mousse cake for example then ideally it’s always sitting in the fridge 😊
can we use cmc powder in stead of gelatin
Thankyou for this the glaze turned out amazing, but it was over a strawberry mousse dome and the pips of the strawberry are showing through as it's not opaque. Poured at about 33 degrees. Should I pour when the glaze is cooler or will this always show through? Thanks 😊
Good question, what i would do to get a thicker coating is what you suggest already try pouring at a lower temperature, you can coat the back of a spoon and see how it drips, if still too fast then let it cook a couple of degrees further Hope this helps 😉

I think you can pour the second coat although it could peel off the first layer of the temperature of the cake is too high, so just be careful with that 😊 For blending? Hmm maybe a food processor with short pulses a blender would add too much air but could still work Hope this helps!

Does the buttercream on the cake need to be white/lighter for the effect to be better and can it be poured onto a dark chocolate buttercream for example? Also can you use gelatin leaves instead of powder?
Do a lighter colour to be on the safe side. I’m sure a darker colour buttercream would be fine for like a red mirror glaze but especially if doing a lighter mirror glaze, do a lighter buttercream. Also, yes you can use gelatin leaves just weight out the equivalent amount.
