More tips on cheesecake. Texture is more important than the ingredients. To get the right texture, warm the cheese and sour cream a little in the microwave oven before starting. Don't melt it, just get it a bit above room temperature. Blend it for a long time in a food processor or blender, mixing by hand will take forever and probably give you an unsatisfactory result. Also blend the cookies (graham crackers preferred) in the blender, and add a little sugar to the cookie-butter mix. Pre-bake the crust for a short time (about 5 minutes), this will decrease the sogginess of the crust. Absolutely use parchment paper to line your baking dish as demonstrated in the video, this prevents cracks and also makes it easier to get your cake out of the pan without destroying it. Bake low and slow, for a long time (I do 250-300F for 90-120 minutes). I don't bother with the water bath. Also, I do not add cream, but I do add ricotta cheese in equal amount to the cream cheese. For flavoring, I use vanilla instead of lemon. Enjoy!
One more tip on cheesecake. DON'T use "low fat" or "lite" ingredients, always use the full-fat versions because fat is part of the taste and texture of the cheesecake. If you are trying to cut calories, just eat less. PS, cheesecake has a surprisingly low glycemic index compared to other desserts.
