  • I love how you always mention what happens with the leftovers and highlight ways to use the scraps. So many cooking shows seem to produce a ton of food waste and just never mention it.

  • I always love Alvins leftover side-quests. I've noticed myself starting to do this too now; used the last of the broccolis from my garden for this season and only needed the florets for sunday lunch (am I british enough yet?). Steamed the stems a bit and used some leftover paella from earlier in the week and stripped the chicken carcass from the aforementioned lunch to make this sort of fried rice dish for the evening; was very tasty and surprisingly the rice didn't disintegrate!

  • I love how you guys try to keep using ingredients you have on hand from previous shows and attempt make use of as much as you can. Maybe other shows do that too, but its nice to see the Babish Universe goes out of their was to be mindful of waste.

  • Choujuku Shokupan 6 slices of medium-thick soft white bread. I always bought the bread from Pasco (Japanese bread brand company), which costs $1.13. I like it because the ingredients are simple. toasted bread with butter, 4 slices I prefer. sandwiches, 8 (or 10) slices. …usually numbered by slices (4, 5, 6 and 8) to indicate how many slices in the package and how thick the slices are.

  • I feel like giant katsu doesnt have the right breading to meat ratio, and a lot of the bites would just taste like pretty plain pork because its so thick. I normally find around 3/4" to be ideal, but the idea to use sous vide to precook the porkchops sound interesting, it would make cooking a whole lot of them faster and probably more juicy.

  • if I recall correctly, in a documentary I watched they said panko breadcrumbs were made by cooking the bread with an electrical current which crystalizes the bread structure.

  • Stunningly beautiful. The fresh panko seemed to yield an especially nice texture and color. I think I'd still prefer normal, thinner slices for a higher ratio of bread to meat, but it sure looked perfectly cooked, and no doubt delicious with that sauce.

  • It doesn't physically contain any okonomiyaki ingredients, but given that the name just means "Fried favorites" I think it should count!

  • Thats not Panko. Panko is made from electrocuted dough, invented during world war II as a means to make bread without fire.They just used tank batteries. The texture is very different to common white bread.

  • Fun fact: Panko isn't actually a normal loaf-style bread, it's "baked" using an electrical current that gives it the distinct texture the crumbs made from it are known for.

    • Odon is greek for tooth and a lot of prehistoric animals were named X-don to describe them. Iguanadon for example was named literally Iguana-Tooth.
