Japanese main ramen types are Tonkotsu (pork broth), Miso, Shoyu (Soy sauce) and Shio (Salt). I show all of them in this video and give you some background knowledge from a Japanese cultural point of view.

Shoyu means soy sauce. Shoyu Ramen is known as the oldest ramen. Shoyu broth is light compared to Tonkotsu and Miso Ramen. I visited Soranoiro Nippon (そらのいろ NIPPON). The restaurant offers vegan and gluten-free options as well.

Shio means salt. Shio Ramen is made with clear chicken broth. I visited Hirugao (ひるがお) on Tokyo Ramen Street. Some seafood toppings are well suited for clear Shio broth. Shio ramen is the lightest broth among all types. Therefore, it's popular with people who avoid heavy food.

Hi , i had been to japan last year in the month of june. I stayed near ginza-6,tokyo, where i ate one type of ramen that i had never found anywhere in japan . It was kind of ramen with no broth but it was so spicy and flavourfull

We can cook ramen. But we would rather eat at ramen restaurants than cook at home. Yeah as you imagined, it saves time and professionally-cooked ramens are more delicious than home-cooked ones🍜😋
Very nice video sir...Just to say, takana, or pickled mustard greens basically means the leaves and greens or stems from a mustard plant, pickled. They are very common across Asia, especially China, Thailand and Vietnam (obviously Japan), and are generally used as a topping for soups, or especially curries like Khao Soi. Keep up the good work! I thought the exact same thing. The translation does make sense.
The idea that one must rush out of the restaurant once one has finished is a much different mind-set than in America. Here we meet at restaurants to talk and sometimes will talk long after the meal is finished. Our waitresses will say, "Here is your bill, but there is no rush."

Ramen soup here in the US is so expensive! Basic ramen is $15. Then if you add toppings, it go up to $30 or more. So expensive ❤❤❤

I heard that ramens can taste differently depending on restaurants even among the same brands. It can be good or bad 😆😩 I want to try Japanese ramen abroad. I’ve never been to NY.
I would say that Kotteri is the term used by the chain so it really only has their meaning. I would say that in English, it means that it is closer to gravy than broth.
Kotteri soup looks Amazing ! They should serve it with bread for us Americans to dip in the end lol. It's like nice Thick Gravy ! Americans would Love this one !! 100%

The Japanese ramen spot that I enjoy the most has a choice of shio, shoyu, and miso ramen. Lately, I've been trying to eat lighter foods. Which do you recommend is the lightest option for someone who needs to eat lighter foods? I love the taste of miso ramen, but I do notice it's a lot richer than most others, especially with the tonkatsu options.
Shio is the lightest. Shoyu is the second lightest. Miso gives ramen rich flavour. Tonkotsu is the heaviest🍜 I recommend you go with Shio first. Shoyu is also good for light options. They are popular with women and people who avoid heavy food :)
Pickled mustard greens makes complete sense lol it may not be an accurate definition of the taste though.
Tonkotsu is the best ramen broth. I miss Ajisen ramen

Most Japanese restaurants that serve Ramen or Udon here in the US serve it with Shichi-mi tōgarashi on the side. Is this not done in Japan?

It’s uncommon. Ramen restaurants normally don’t offer veg choices because being a vegetarian or vegan is not very common here in Japan🍜 Let’s say less than 10% of ramen restaurants offer veg choices. If they have veg option, it’s clearly shown outside of restaurants like ‘we have vegetarian ramen’ so that you can spot.

We do not necessarily use pork for ramen😄 The only broth you must avoid is Tonkotsu. Salt ramen, Soy sauce ramen you can have them without pork toppings. Instead you can put something else. Also there are quite a lot choices like chicken stock,veg stock and seafood stock. Some restaurants have signs at entrance Halal available(but not many 😅) Specific questions would be better. You better ask to staff ‘Do you use pork? ‘ rather than ‘do you have halal?’ Although Japanese are happy to help you, most of us don’t know what halal is. You don’t have to give up delicious ramen because of religious reasons🍜Your ramen is certainly here. You should search restaurants before you actually go there so that you don’t waste your time✨

The English translation may match what it looks but does not necessarily explain how it actually tastes. It’s a translation dilemma.

In the US I will order "Hakata Ramen" if I see it, it's my favorite, but I'm not sure what type of ramen it really is, or if it exists in Japan. Maybe it's just made up?
Hakata ramen is categorized as Tonkotsu. No doubt 👍 It’s just a different way to say.
Hakata ramen is probably the original sub category of Tonkotsu ramen. It’s the region where it was invented. There are many sub categories of Tonkotsu, like Kumamoto, Wakayama, and Saga, which I would encourage you to try if you ever go to Japan. Sadly Tonkotsu is the main type you can find in America so it’s the only type most Americans know. Japan has probably hundreds of different styles (they are sub-styles of the 4 main types in this video)of ramen that are all different and wonderful in their own right. I hope you get the chance to travel to Japan and try some of the others. My recent favorites have been the many duck ramen shops that have been getting attention lately. I also love the thick tsukemen and Jiro style.
