Following the original Coca-Cola recipe, I attempted to make coke using simple ingredients without essential oils.

7x flavoring:
10 grams of orange peel
10 grams of lemon peel
4 grams of cinnamon
1 gram of nutmeg
1 gram of coriander seed
and lastly 4 grams of neroli or bitter orange, but I couldn't find any so I did some research and found that kaffir lime leaves are comprised 80% of neroli compounds so I used 4 grams of them instead.
75 mL or 5 tablespoons of coconut oil
Rest of the ingredients
10 mL of alcohol
600 grams of sugar
100 grams of sugar to caramelize
50 mL of lime (1 lime)
500 mL water
3.5 g citric acid

I make a lot of Cola at home for my family, you don't need ANY food coloring, no offense intended to FlavorLab but this isn't the best way to color it, and actually I'll tell you what I do and what Coca Cola itself does, and you don't need to buy anything extra! Here you go: when you're making the caramel at the beginning, add a little bit of water, like a few drops to a teaspoon, and cook it a bit longer than the video suggests, until it starts to smell very toasted a bit like chocolate chip cookies and turns ALMOST black, very dark red / very dark brown, then make the cola the rest of the way as the video suggests and it will be very dark without a need for added food color; what I'm telling you about is how to make "caramel coloring", you should look a recipe up here on youtube, it's the way store bought colas and root beers, and even some sauces and gravies, are colored! It can add a bitter / sour taste a bit like coffee, that you can reduce by adding more sugar and lime juice. And PS replace the carrier oil you're using with MCT oil, olive oil, vegetable oil, or canola oil, those won't get solid like coconut oil does when they get cold. And if you plan on making this a lot, you can put a whole bunch of the aromatics into a bunch of alcohol and leave it for a few weeks and you can make what's called a "flavor extract" or "tincture" and use that in place of the oil altogether, like was mentioned in the video 🤠

OK what I learned from my attempt: 1. I used ground cinnamon, nutmeg and coriander because un-ground ones were ridiculously expensive since they were only available in the Healthy Food section; it works OK, but use about half the amount of ground cinnamon; 2. If you're using ground ingredients, you must mix the oil during those 30 minutes or they might burn very easily and ruin the whole mixture; also it'll taint the oil dark brownish, but once you strain it it'll return to yellow; 3. 400 g of sugar is still hella sweet, I'll try 250 g next time; 4. For some reason when I poured the water into the caramel, it turned really red, like, literally blood. This is apparently normal; 5. I used lime juice concentrate (two tablespoons = one lime juice) and it did not turn green; but I'm still using a black food coloring next time because it looks too much like diluted energy drink; 6. Coffee filters take forever to strain the oil, I'll try cheese cloth or something along these lines next time.
Thanks for this advice. Did you use the coconut oil to extract the flavors? Did you add the oil to the final product? Im not sure what the point of the alcohol to extract the flavor from the oil was because this wasnt in the video.

This is very enlightening. Thank you! When I crave a soda, i will remember citrus, spices, food color and ice. I am a lazy cook, so that will probably do it. It also reminds me of an alcohol drink called the "Tootsie Roll" that is made with Kahlua and Orange Juice. It really does taste like a tootsie roll candy. Today I only had coffee syrup, so i added some to orange juice. Ratios were a bit off, but it tasted good anyway.

Great method. I personally don't use the essential oil method. I just dump the fresh 7x ingredients into the caramel + water, simmer for 20 min and strain with cheese cloth. I like to add some freshly grated ginger too for a bit of a bite and a tiny drop of vanilla essence. Works like a charm !

You can't have used the correct ingredients or mulled the spices properly. You need to crush the nutmeg and cinnamon in particular as they give that 'deep cola' flavour and as the other guy said, ensure enough oils are out and blended properly

Just tried this recipe today. Followed it closely. My measurements for the ingredients in the 1 to 4gms bracket were a bit here and there but flavour was decent. Added about half the amount of sugar mentioned in the video too as I dont prefer overly-sugary colas. Finally I skipped the colouring, got a mountain dew looking cola. lulz. Have a few questions though! 1. Can I use any neutral oil other than coconut? Cos even refined coconut oil has a strong aroma and flavour for my taste. 2. Any tips on how to emulsify the flavoured oil with gum arabica? I tried mixing the oil with powdered gum arabica, wasnt a total success. Other than that, thanks so much for the recipe! had a blast making it!
you have to mike it with a drill for 20 mins, the drill has to have a mixer like th evideo instead of a nail. Also you can google and watch

I only caramelize some cane sugar with a little cinnamon then used polar orange crème soda water for fizz and it tasted just like cola sans the caffeine..but Next time I will add some black coffee to add caffeine and make the color darker. To think I had been having to buy Mexico glass bottled coke because it has cane sugar instead of the U.S. corn syrup cola..Mexico cola which is almost $6 a 4 pack and really difficult to find. I made organic GMO free Coca Cola.😃
