1886 Pemberton Coca Cola Recipe Test
Ever wonder how to make the worlds favourite soda pop Coca Cola? Very few people know the 'real' secret recipe... but there are versions out there hand written by the inventor of Coke - John Pemberton. (Watch Part 2: • Making Squozen Cola Re... )
Our diy Coca Cola recipe follows his 1886 version. Glen got the idea to do this back in 2011 from an NPR radio show called 'This American Life', but getting the ingredients for Coca Cola wasn't easy... and still isn't.
Obviously Coca loaf extract is the biggie in the room - but even Neroli Oil Extract is hard to get; in that it’s so expensive!
So if you are going to set out and make Coca Cola at home, or any Cola recipe at home; there will be some comprises. In the end, even with compromises, the flavour profile of the Coke recipes is so complex that minor variations are hard to detect.
Merchandise 7x Flavour [Use 2 oz flavour (below) to 5 gals syrup (I used 15mL per 19L, or 1.3mL / 1L)]
236 mL (8 oz) high proof food grade alcohol
20 drops (0.5g / 1 mL) Orange Oil
30 drops (0.75g / 1.5 mL) Lemon Oil
10 drops (0.25g / .5 mL) Nutmeg Oil
5 drops (0.125g / .25 mL) Coriander Oil
10 drops (0.25g / .5 mL) Neroli Oil (You can sub Bitter Orange Oil)
10 drops (0.25g / .5 mL) Cinnamon (Cassia Or True Cinnamon) Oil
Original Sugar Syrup Recipe:
FE Coca (Fluid Extract of Coca) 3 drams USP (10.5 mL)
Citric Acid 3 oz (85g)
Caffeine 1 oz (30 mL)
Sugar 30 #
Water 2.5 gal
Lime Juice 2 pints (473 mL)
Vanilla 1 oz (30 mL)
Caramel 1.5 oz or more to colour
I made 1/8 Original and re-ordered the ingredients to order of use:
Water 1.18L
Sugar 1.7 Kg
Caramel 5.5 mL
FE Coca 1.3 mL (not used)
Vanilla 3.75 mL
Caffeine 3.75 mL
Lime Juice 59.12 mL
Citric Acid 10.6g
Method:
Mix together all of the ingredients of the 7X Flavour.
Set this aside in a sealed bottle.
Heat the water sugar and caramel in a large pot.
Stirring continuously, just until sugar is dissolved.
Take off the heat and mix in vanilla, caffeine, lime juice and citric acid.
Stir to fully combine.
Add a measured amount of 7X flavouring to the sugar syrup.
Mix with carbonated water at a ratio of one part syrup and 5 parts water.

Glen & Friends Cooking I haven't had a Coke, Pepsi, or generic brand of Coke/Pepsi in decades as I don't like the taste. Nor do I drink coffee, but when I need caffeine I will drink Mountain Dew or Code Red Mountain Dew. I first had Mountain Dew in rural Alabama back in the late 60s/early 70s as a kid and loved the taste. Today's Mtn Dew, including Mountain Dew Throwback made with real sugar, doesn't taste the same. It would be interesting to find the original recipe for it and recreate it.
Forgive me if I'm wrong but I'm pretty sure that Coca-Cola didn't have any carbonation in it back 1886. Also is had coca plant in it making it highly illegal today.
It did have carbonation back in 1886 - definitely. The recipe gives instructions for carbonation and mixing. We touch on the coca extract, and because of it's current illegal status, it's the only ingredient we leave out.
It's almost as if I figured out that they don't need cocaine in it to make you addicted, they just need to put caffeine in it with an incredible amount of salt and sugar. Inventing the term "till next time".

Actually, it probably didn’t work at all. Not only would he (presumably) become hooked on cocaine, but nothing in that mixture would have done anything for the symptoms of opiate withdrawal.

I had a pharmacist friend one time make the original recipe just like you did only they were able to get the cocoa extract. It was incredibly sweet and had a strong effect on my sinuses almost like a nasal decongestant.
That tiny amount of coca leaf is harmless. They should’ve kept it! 🍃😵💫
That is why they don't let you buy multiple packs of nasal decongestant from pharmacies, one of the active ingredients is a stimulant and they use it to manufacture street metamphetamine.

ultimately they didn't pour a lot of alcohol in it, it was probably just to solve the oils
Here in Australia, our local Pepsi bottler experimented with a short production run of what it called original recipe from the 1800s. For me it was so delicious and full bodied with amazing flavour hints. Cinimon, Berry's and caramel were the main flavours. It was the best but sadly I was maybe one of a few who bought it and it was discontinued. It truly was tonic like. Amazing flavours.
I was quite possibly the only person in the world who liked Coke Life. I was gutted when I found out they stopped selling it. If there’s anyone else out there who liked it, you weren’t alone. We both had good times.

Best cola I have tasted was one I found in Hawaii at a health food store made with cane raw sugar. Here in Norway Coca Cola is made with real sugar and not corn syrup and taste a lot better then the curn syrup one. Also Coca Cola from plastic bottles with the plastic they use now is un drinkable, I only drink Coca Cola now when I find it in glass bottles which is sold out 80% of the time (seems many other agree that it taste better from glass bottles...).
I was sad that Dr. Pepper never caught on in Australia as I preferred it to cola. I tried a can from the USA from the imported section of Woolworths (?) but it was a cheap formulation sweetened with corn syrup.

Theres something special that Coca Cola has that no other drink can imitate it has stood the test of time. For decades Coke has always been my favorite drink to accompany with food. It is truly an iconic drink.

BΣΛЯ ? Fun fact they still use coca leafs today. They just have them processed at a government monitored plant so that the leaves are “spent” instead of normal. That way there’s no cocaine but it still has a very similar texture and flavor.
@@cameronrice406 This leaves out an important detail. The leaves aren't being processed specifically for coca cola. They're being processed for the cocaine for medical purposes, and the spent leaves are then used to make coca cola.
I do really enjoyed drinking Coca-Cola as it is one of my favorite cold beverages for me to drink. If I was in 1886, I would love to give this a try to see how the texture is. This original cola has been around 113 years older than me. Thank you for figuring out this recipe on how you made the 1886 coke.

Very cool to see the original recipe! I remember as a kid when the coke flavor suddenly changed, later I read that's about the time when they changed from using beet sugar to cane sugar. Maybe I imagined it, but I never liked it after that. One piece of info, I used to work for McCormick, they make all the cola nut extract for pepsi, they use tons of cola nuts in their extractor that runs pretty much 24/7. Cola nuts are definitely there for the flavor, I would bet coke does the same.

tried to make cola water kefir. didn't fail entirely. it became some kind of cola, but with lumps from the oil and coloring. it was not anything unpleasant about it but it was not perfect, so i bought two bottles maison routin 1883 cola since there where on sale 50%. and now it fermenting on my bench, i think this can't fail. looking forward to test it in two days.

I was a teen living in Austin, TX when "New Coke" came out. The consensus was, we hated it. For a while, you couldn't get the original "Classic Coke" - they didn't release the "classic" formula for several months after the release of "New Coke". Anyway, one day my buddy and I were hiking around in some outskirts of our rural subdivision, and we found an old warehouse with unlocked doors, and inside, it was FILLED with abandoned vending machines and crates of soft drinks, including many, many crates of "original" Coca Cola. We spent the next couple days hauling it all home to my mom's garage, and spent the remainder of the summer overdosing on Coca-Cola. The 80's were awesome.

Glad you mentioned ThumsUp. It was invented by two brothers in India after the Indian government kicked out Coca Cola in the 70s. When Coke came back in the 90's they realized they can't beat ThumsUp. It is still the biggest selling cola in Inida. If you go to an Indian sore, get it. It is pricey, but worth it.

Keep in mind that those drops are _very_ concentrated. The flavouring in, say, an orange, also works out to a tiny portion of the volume of an actual orange. And in an actual orange, the edible part that utterly dominates (besides water) is sugar as well. That's how evolution made us (and oranges) - the flavours are only there to steer you towards the richest sources of nutrition; they're not the thing that makes you reproduce more than others :) Of course, fruits used to be a seasonal and relatively scarce thing in our ancestral environment...

I tried a coca leaf when I went to Chile and chewed on it because it is highly used in some South American countries but it gave me no side effects. I think I get more side effects with the meds I am taking than a simple leaf. However, it is known if you chew on more than one you can get a rush just like coffee or yerba mate. It all depends how much you can handle. Also, coca leaf is not as strong or bad as cocaine because it has not been processed and mixed with other substances. Aside from all this I do admire how strong people were in the 1800s and early 1900s drinking things that could kill people today instantly. We have become slowly a bit weaker a generation after another tolerating less what our ancestors had to survive.

I've had neroli oil as a fragrance oil, and it is very much floral, vs. citrus. Orange blossom oil might do as a substitute.

Everybody’s freaking out about the coca leaves. I lived in Bolivia for several years. Coca leaves were grown and sold everywhere. I chewed leaves several times to help with altitude sickness. Chewing 5-6 leaves for about 10 minutes makes your mouth a little numb. No other effects. It would take a bunch of leaves chewed daily to have any effect.
Can you make coca extract by putting coca leaves in drinking ethanol?
