Yellowfin Tuna, Wahoo, Cobia & Dolphin Fish | Clean N Cook

In this Clean N Cook episode of BlacktipH, Capt. Blake and I fillet a huge Yellowfin Tuna, Wahoo, Cobia and Dolphin Fish before heading to Casey's house for a Cook-Off. At Casey's home, we cooked all four species of fish differently. I cooked the Cobia and Dolphin, Blake cooked the Yellowfin Tuna, and Casey cooked the Wahoo. I cooked the cobia in the oven and the dolphinfish (mahi-mahi) in the pan. Blake decided to cook his yellowfin tuna steaks in a pan and Casey prepared sashimi wahoo and pan-cooked wahoo medallions. Once we finished our recipes, the judge decided who had the best-tasting fish.

  • What I love about this channel is how little meat they "waste" ....so many boats do a hack job. These guys are not just good fisherman but also do a damn fine job with the processing. Keep up the good work!

    • To me he wasted those tuna steaks he could've prepared them so much better. (I say this because I'm a chef in training) If I was cooking it with butter from the beginning I would put the butter in the cold pan and bring it up to heat. The moment it starts foaming I would add the tuna. What he did wrong was adding the butter to a very hot pan, this burns the butter and creates a bitter flavour. If you are doing a high heat sear just use a high temp oil like rape seed oil and make a butter sauce.

  • I love when you guys do clean N cook videos. I have never tried any of those fish before and would love to try to catch and eat one for myself. Just like you guys have said, I think the simpler the fish is the better it is. There is no need to put all these seasonings on the fish. I really enjoy how you guys show what techniques you guys use to clean the fish and get the fleets. Then you guys show us your way of cooking. It gives people options if they have never tried those fish prepared that way before.

  • Yet another video that was great! I have to admit you threw me off posting it on a Monday! Does that mean we get a double video this week? Usually Tuesdays are my favourite day, for obvious reasons. All I can say is thank goodness for the bell to let me know there was a surprise BTH video today. This video had me salivating from the beginning. It ALL looked like it tasted amazing. I have never seen Cobia or Wahoo available in our stores here.     • You know it's weird, but I do the same thing. I'm getting to a level with my cooking skills that I can predict what their ingredients should smell like, what it should look like at each stage. When they started cutting into the tuna, I could tell that the meat was appropriately firm and rich, and that it would contribute a lot of flavor.
