Country Women’s Association secretary and cookery judge Pam Wright shares her top recipe for the iconic Anzac biscuit.

96g (1 cup) rolled oats
90g (1 cup) desiccated coconut
150g (1 cup) plain flour
220g (1 cup) white sugar
1 large rounded tablespoon golden syrup (*amendment)
½ teaspoon salt (optional)
125g butter
1 teaspoon bicarbonate soda (*amendment)
2 tablespoons boiling water
For a chewy Anzac biscuit replace the cup white sugar with ½ cut white and 1/2 cup brown sugar.
1. Preheat oven to moderate 180 degrees. Prepare two baking trays.
2. Place the oats, coconut, sifted flour, sugar and salt into a bowl. Mix well. Melt butter; add golden syrup, bicarbonate of soda and the boiling water. Stir well. Add liquid ingredients to dry ingredients. Mix well.
3. Place mixture in spoonfuls onto lined trays and bake for 10-12 minutes. Remove from oven, loosen biscuits on tray with a knife or spatula. Allow to cool on tray.

So very sorry for this great loss. Memories are the greatest gift from our loved ones.
My grandfather said during service in World War II One of his mates sister would send ANZAC biscuits that were tougher than the biscuit the Ration hard tack. Hard tack Need to be soaked in hot tea and even then you still soak until it softened enough to bite through. Well the legend goes they used to bash the ANZAC biscuits and a hardtack together and boil it up to make a porridge which they where quite happy about. But his mate sister got engaged and they sent a telegram to the groom at the wedding telling him to join up as he would get better fed.. Funny his mate never received another care package from his sister.

I am so sorry for your losses of father and uncle. My father served in ww2 and served in Australia in Perth I think and Brisbane, he lived to the age of 95 until he passed in 2021. He loved the Aussie people and served 30 navy.

You have to flatten these biscuits at the end of the baking process as they don't flow out to a flat shape. I have the CWA cookbook and the recipe, which is the same as that shown in the video, produces a very dry mixture. As for the biscuits themselves, they are very, very sweet so try cutting back on the sugar.
How many biscuits from that recipe?
Oatmeal biscuits from Woolworths aren't bad. Best laxative there is!

according to the 1914 recipe - 2 Tablespoon hot water, 1 teaspoon bicarb, 1 large rounded Tablespoon Golden Syrup

Haha, exactly why I'm here too. Brownies are way too rich, but Anzac biscuits is where it's at. And when you want the best, CWA is the only way to go.

I Think there is a mistake. The recipe should be 1 teaspoon of Bicarbonate of soda, not 1 tablespoon. I just did this recipe and its way too bicarby tasting.

@@sheddden the printed recipe didn't have golden syrup in it when it should have is what Michelle meant. The recipe has since been corrected.
These are austere times, Michelle. The current government doesn't fund the ABC so adequately that golden syrup can be afforded.
This is a very looking ANZAC Biscuits for the war.
One day the list of ingredients will just appear, amounts needed method. All printed on the screen and left for a few minutes. Maybe one day in u tube cooking land.
