Bamboo shoots are young shoots that grow out of the ground of bamboo species, including Bambusa vulgaris and Phyllostachys edulis. Bamboo shoots are used as food in many Asian countries and are sold in many forms such as dried bamboo shoots, fresh bamboo shoots and canned bamboo shoots.
Freshly harvested bamboo shoots are a good source of thiamin, niacin, vitamin A, vitamin B6 and vitamin E. There are reported to be 17 different amino acids, of which 8 are essential for humans. The amount of amino acids in jarred and fermented bamboo sprouts is lower than when freshly processed
After planting, the first and second years are the care period, and the third year onwards is harvested. Harvested for about 15 - 20 years, Diem Truc bamboo shoots have a long harvest period, many months of the year (from March to November - December). In March, when the temperature is 150 C or higher, bamboo shoots grow.
When the bamboo shoots are not out of the ground, they are golden brown, the flesh is delicious and of good quality. Once the bamboo shoots have grown out of the ground, the skin will turn green, the flesh will turn woody, and the quality will decrease. Therefore, the bamboo shoots must be covered with soil to prevent sunlight from entering. To improve the quality of bamboo shoots, during the time of harvesting bamboo shoots, you must use soil and organic humus to cover the base of the bamboo shoots with a layer of soil 16-30 cm thick or more.
- When to harvest bamboo shoots: When the bamboo shoots begin to sprout from 10 - 20 cm above the soil layer, harvest them. In the early period (March - April) and the last period (November - December), when the temperature is low, bamboo shoots grow slowly and are harvested every 5 - 7 days. In the summer-autumn months (May - October), when the temperature is high and there is a lot of rain, bamboo shoots grow in full bloom every 3 - 5 days.
- Time to collect bamboo shoots: It is best to collect bamboo shoots in the morning.
- Shoot cutting location: Is the junction between the underground stem and the bamboo shoot stem.
- Bamboo shoot cutting technique: When we exploit a bamboo shoot, it will affect the sleeping nodes close to the cut, at that position the shoots will continue to sprout. Therefore, when harvesting bamboo shoots, you need to dig deep into the ground, use a knife to cut at the bulging position of the bamboo shoots vertically from top to bottom, about 10 cm from the base of the mother tree. Be careful not to damage the base of the mother tree, because there are nodes that produce new shoots. After taking the bamboo shoots, cover the base of the bamboo shoots with soil as before
