Why do you make it sound like that's something to be ashamed of though
For anyone that doesn't know, sashimi is eaten raw, he is not cutting it for fillets to cook or anything, so the presentation is key as well. Its specifically for sashimi though, they only want the nice marbled meatier cuts. I'm sure they will use the extra trimmings and bones for a stock or in some other dish.
Usually those bones would be used for miso soup

Being a very much novice in the field poke/sashimi/sushi worker on a raw bar in a very fusion based restaurant, the cut across the grain silver skin side made me realize that the way the fish will come apart is so much a part of the experience Than I realized I have much to learn.

Kalma boys I'm kitchen staff. My kitchen even not that big and professional but we clean as fuck. I think it's depends on who controling kitchen. If head chef is clean then everybody is clean.
@Lo iq Parasite @thetruth @jbnov 2001 To be fair tho guys, the guy in the video keep cleaning the place and the knife because it’s sushi. To be exact, Sashimi Sushi which is raw fish. Imagine using a dirty place and knife to serve raw fish for customers.
