  • Recipe for this dessert is equal parts almond/hazelnut milk and pork blood. Beef blood could be used in a pinch as it does not have a too strong flavor ( have tried it). Asian markets especially Filipino groceries sell frozen beef and pork blood. Thaw the blood in fridge for 2-3 days and pour off as needed or completely thaw then portion into ice cube tray for easy use. The spices used for flavor in this scene are obviously whole cloves and whole green cardamom pods. Best to use the ground spices as its better mixing. The best chocolate is 95 minimum to 100 % dark for baking. You can add a sweetener during cooking. I suggest honey rather than sugar. Mix blood into nut milk and then use gentle low heat (simmer) to warm the mixture to prevent curdling of blood. When temp reaches 150 stir in powdered clove/cardamom t/t then dark baking chocolate cut in shavings for faster even melting. Stirring consistently bring temp up to 165. Pour into dessert cups (or hollowed out naval or valencia orange rind shells). Put into fridge for at least 2 hours to overnight. The scene for heating the milk/blood mixture looks like Hannibal is using a Hexamine heat cube used in military surplus Esbit folding camp stove? Closest thing that the heating flame looks like? Makes sense as a range top gas or electric even on low simmer still burns too hot (nut milks and blood are heat sensitive) Hexamine cubes and Sterno canned heat give gentle consistant heat for cooking/warming. The garnish is lady finger cookies, blueberries, raspberries, blackberries and cape gooseberries. And plastic spoons I think are not a joke but have a practical purpose. The iron in blood could react like caviar you can't use metal spoons as metal reacts with caviar tainting its delicate flavor. With caviar you serve it with mother of pearl shell spoons.

    • I remember one time I asked a coworker what she was eating for part of her lunch..it looked weird......she said blood pudding...all I could picture is her slaughtering an animal and just dumping blood into a Tupperware container with jello for setting.....I never asked what she had for lunch after that...

  • As a chef I think the use of plastic spoons might be non reactive with the iron in blood? Certain food ingredients react with metal like stainless steel. Caviar is served with mother of pearl shell spoons as metal would react negatively with sturgeon eggs.
