I don't see that he would have ANY trouble with water coming-in over the sides if he were to flatten it out a bit, ( if that's what you're concerned about), if you watch carefully (from 0:45 to 1:07, after he comes out of the wake of the other boat), you'll see that he's plowing badly, a bit of trim there would DEFINITELY NOT have him "Stuffing the bow", ( just listen to his engine & check out his wake)...... From there till the end he's just smack'n the water flat,....... Console operated trim-tabs are a damn good investment for helping to prevent your hull and transom from damage that can happen after a coupla-years JUST from being in the habit of smackin' the water unnecessarily too hard too often. I've seen people nearly lose their engines (they had to be towed-in) because of transom damage that was caused by smackin' the water too often.
