HANOI, VIETNAM - Today I’m in Hanoi, Vietnam, and going to try a dish I’ve never had before: bun ca. It’s a dish that includes noodles and fried fish with dill and herbs, and even pineapple in the broth. I absolutely loved it, so much that I needed to try three different versions, with different noodles and both the dry and soup version.

That vegetable is called “rau cần”. The English names are water celery, water dropwort. It’s a common ingredient in fish/seafood based soup in Vietnam. Also VERY good when stir fried on its own or with garlic/tomato.

As a Vietnamese, I've had Bun Ca almost every morning before I went to school for 10 years. Never got tired of it. The only reason I stopped eating it is because the lady selling it near my house moved away. I still remember that sweet sour spicy soup even to this day.

Great choice Mark! This is my favorite place to eat this dish in Hanoi. Bún is the regular vermicelli noodles, miến is the glass noodles, and bánh đa is the red noodles. I prefer getting it with bánh đa because it's a classic Northern style noodle, you can't get it in most of Vietnam, while the other two noodles are common throughout the country. Looking forward to the next Vietnam videos!

in Hanoi, we have some classic combinations of different proteins with herbs/spices in traditional cuisine: dill with fish, lime leaves with chicken, ginger with beef, onion with pork, Vietnamese balm with fried tofu etc.

@@FlavorofMind Great! I don’t know many foreigners can eat herbs like Vietnamese balm because it has a slightly bitter taste, but you should give it a try. Growing up with those food combinations I think they really make sense.

When I lived in San Diego and Orange County I tried every Vietnamese noodle dish that I know of but none like what I’m seeing. Great video.
I think the reason for that is because most Vietnamese who live out in Southern California are either from Central or Southern Vietnam. Very few immigrated from Northern Vietnam, so there aren't that many restaurants that serve Northern Vietnamese dishes. I just found out recently myself that my grandparents on both sides were from Northern Vietnam originally but later moved to the south before they came to the US. Outside of that, I have only ever met one person growing up who told me openly that they are Northern Vietnamese.
@@aznmochibunny When I was in Junior, I had a friend who was from North Vietnam. I didn’t know it at the time but my other friends told he was from N. Vietnam just by by the accent.

Hey Mark you should do a food tour of Hai Phong and eat Bún cá cay, or spicy fish noodles, or Bánh đa cua which is crab noodle soup. There are so many amazing dishes there that would suit your taste more since you like spicy, sour, and salty tastes.
Thank you for visiting Vietnam and appreciating the local food . I once watched a very ancient video of you in Saigon ( made more than ten years ago , I think ) , you had long hair . It began at morning in the hotel then you drank at a sidewalk coffee and ate in a restaurant.
Vietnam has all kinds of fish noodles recipes. In Hanoi there are at least dozens of fish noodles types I believe. Also try the fish noodles in Haiphong if you have time. Haiphong is just another world of food.
Hai Phong is where all the Hanoians go for food tours due to it's great food. I'm almost certain the cha ca with the red noodles came from there.
I was just in Hanoi in January/February. It's hard to believe so many people eat pho for breakfast there! I loved Hanoi, I flew to Da Nang, then spent a bit of time in Hoi An and Hue as well. Beautiful country and the service was tops everywhere!

The brown noodles are from adding caramel coloring to the pasta dough. Kind of a slight burnt flavor

Looks delicious 😋, never heard of anyone putting a slice of pineapple in the soup. Sounds delicious 😋. Love that they put fresh vegetables and fried fish.

There's another Vietnamese soup called canh chua that also has pineapple in it, but that soup is usually a compliment to eat for family dinners with rice and other side dishes.

Pineapple is often used in canh chua (sour soup that's loved by Viets...the fish version uses pineapple, there's also a pork rib version but it uses pickled mustard greens). Many vendors also add pineapple to their bun bo Hue broth, but it's only used to flavor the broth, it's not eaten with the meal.
So hard to watch this vietnamese series while being a vietnamese person living abroad. I miss the food so so much.
