  • Working on a yacht in the galley always seems like the most stressful job to me. I was a deckhand and our onboard chef was not only in charge of cooking for the crew and guests, but also provisioning and meal planning and budgeting. The owners we had for one yacht had a friend that raised black angus and Hertford beef so we had tons of beef on board too, but the problem is they wanted all the good cuts and wanted the chef to use the ground chuck on us, of which there was a lot of. We prayed for chicken and pork, plus some of us would go free diving and spear fish for the crew just to avoid having ground chuck in tacos or burgers again. We went to an island that had free roaming chickens, let's just say that when we left, they had a few less. Chefs can make or break a yacht or a crew

    • I'm sorry to hear that. What those owners don't realize, is that crews talk. When they have difficulty getting anyone to work for them, they be completely clueless as to why. We treat our crew like the hardest working members of our family. They keep us safe and allow us to enjoy ourselves without worry. And they've been loyal to us all along. Some people just don't understand that a little dignity and respect, pays big dividends. Besides, I can't imagine having different people on-board all the time. It would be like staying at a random, but familiar hotel, instead of home away from home. I know the time will come when our beloved crew moves on to other things in their lives, but for the past 5 years, they are a comfortable institution that we are honored to know and love.

  • I see you are a regular "Costco" shopper! The instacart shoppers must love filling your orders! My only suggestion is the (I believe) Norwegian salmon in the blue package is received at Costco already frozen. If you're buying it in quantity you may want to reach out to Costco and see if you can get it before they thaw it out as they normally do. It would probably taste even better if it hasn't been thawed then refrozen in your deep freeze!

    • I don’t buy meats in bulk, because it takes too much time to breakdown and too much time to thaw. I did buy in bulk on my first trip and that was a pain. It is worth the extra cost to have it in smaller portions already.
