  • i studied under a Callebaut master chocolatier when i was taking my pastry chef course. it was phenomenal the art and detail that was taught. it forever made me meticulous with regard to mise en place, patience and finesse when it came to creating. this was a joy to watch - thanks Bon Appetit

    • I was thinking of going to some of their courses, but i think it's a shame that they only show a couple of recipies. And it's a bit expensive in my country. I think maybe online courses are better. Not sure.

  • Awesome video! It is one of the rare videos that covers the process end to end on a really high level. It's only missing the actual proportions but excellent otherwise. I've been making chocolate for a few years now and can tell his technique and understanding is spot on. Have to try the nougat next!
