It takes from many disciplines discarding that which is non-essential and using what is most effective. Elegant refers to the cooks approach, delivering many tasty, nutritious and attainable recipes.

    • You can use lettuce if you don't have spinach. 🙂

    • Oh! BUT you want to make sure that it isn't subjected to the heat for very long, or else the lettuce will cook. You want the lettuce to still keep a little of it's crispiness. Unless, of course, you use kale. Kale is often cooked, but not other lettuces. Regular lettuce doesn't taste very good when it's cooked (IMO).
