    • Next time put another pan with water underneath the cake pan so you don't have any splits or cracks on top of the cake I had a Italian guy show me that pretty awesome trick when you are baking cakes🎂🍰

    • It certainly is. I've worked with big cakes. Unstable as heck esp. When hot like that. It also responds to humidity . Its heavy yet not very strong. Yet a good cake must look architectural.

  • This is Castela Cake. They were huge in Japan & Taiwan. Then Korea & Singapore make them too. It's basically sponge cake with airy, fluffy yet moist texture. It's not dense & too sweet. The purpose is that we can eat more 😊. The method to acquire that jiggly texture is using water on the tray below the cake pan inside the oven. Many bakers have put up the tutorial in KZhead.
