Would you try to tell her that her cooking is wrong?!?!?! HELL no! She is the perfect Asian Auntie. If you notice, she does most of the work because she doesn't trust him to not F it up. This is the kind of auntie that makes you feel like an orphan when you go to her house but you also know you're going to get great food at the end. She will look at you and say, "Why so skinny?!?!? You must eat more. Let me cook for you." (Proceeds to make the child do the manual labor portion of cooking but, never the parts that are important because she doesn't trust them enough)

And I know Uncle Roger is very knowledgeable about asian cousine, so it makes sense he teaches others how to make it authentic, its just a funny irony.

To further compare to uncle roger, If you saw other videos of uncle roger cooking the things he critiques, you will see he is not the best at cooking those things himself either. In certain cultures, you know how the food is made and you know what tastes good whether you know how to cook it yourself or not. Whether you're knowledgeable about food or not, you will be knowledgable when it comes to food from your region/upbringing. It's like a requirement lmao and I feel that as someone who can't cook some soul food dishes, but knows how it needs to be made.

About the oil separating, it may look disgusting to some like the chef put too much oil, but IMO this is a requirement in dishes similar to Thai green curry (like red curry & sambal), as the separated oil is infused by the aroma from the sauteed paste. The third mistake missed that aroma infusion and turned the basil oil into a condiment.
In Philippines too like bicol express my or ginataan because its like a concentrated flavor bomb

Uncle Roger. Some Thai chefs also add red chilies in green curry, mostly as decoration before serving, so it's barely cooked. You can usually find them in big restaurants, but not often in homemade green curry.
