I had no idea Ramen was so complicated to make when its presented so simply and quickly in noodle bars.
if you're interested, there's a great mini docu done by the channel "life where I'm from" where he follows a guy who runs a hole-in-the-wall style ramen show in Tokyo. It's so much work! Very eye opening too. But it makes more sense. It's a ton of prep ahead and overnight stuff to make, but the final assembly isn't long. Uncle Roger is right (of course) that Ramen is definitely not a dish really worth making at home. It's a true restaurant dish.

It's complex but scales pretty well. Making fifty litres of broth doesn't take that much more time than making a litre, same with basically all the ingredients. Also helps to have the equipment for it. Some dishes don't scale as well, like when you're looking at those Michelin star dishes with fancy plating, all those little pieces cost the same amount of time for someone to put them on each plate, and there's a lot of them.
Sorry for second comment but yeah. French cooking is all about building flavour and colour. Many ppl who are educated in French style cooking are looking for that developed rich dark colour but obviously that doesn't apply to other cultural cuisine! It is amazing to achieve that creamy white opaque clean colour of the tonkotsu broth!

As an Asian, I am constantly blown away by how much Uncle Roger knows of recipes from different Asian cultures
i mean he is a comedian that travels here and there, london, sweden, malaysia , singapore etc. so it is no strange that he knows quite a lot of asian recipes since he is might as well learned them in malaysia growing up.

Have to admit that when I saw Uncle Roger's first egg fried rice reaction video, I never in a million years thought that he would actually know so much about cooking Far Eastern food. Before he was just hilarious; now my respect for him is growing exponentially with every video.
I guess he did his research, but he from south east Asia anyway so asian food probably his favorite.

in many cultures, where they have food made from blood, many of them keep the blood taste in broth... I am not a fan of it, but it is still reasonable. for someone who is no Japanese or even Asian, I say he did a pretty good job, I am allergic to all kinds of sea food so if he didn't add fish sauce I'd actually love to eat that dish.
correct way to make tonkotsu soup. 1. Put bones into boiling water for about 20 min. 2. Put away the water(it looks extremely dirty) 3. Put the bones into water and boil it. (it can start cold) remove the scum 4. Put it to low heat and cook it for as much as you want. I do it for more than 12 hours. Add water if it gets less. Adding garlic, onion carrot all cut in 1/2 and cabbage core for few hours makes it more tasty but it's not necessary. I've tried this in Germany and my japanese friends love it.
