    • There were like 5 years when I never cooked and been eating these street foods mostly. Basically everyone does that, I can do it with a home kitchen wok easily. But these woks are super heavy. You basically can't lift and toss, they have to be on the stove, which is actually with some depth to make it possible. Even then, I had a chance to learn this in a commercial kitchen. 2 minutes in, I cannot feel my arms. Hard to imagine to work straight 2-3 hours during meal time. They don't even look stronger than me XD

  • Do you know why Chinese fried rice was different coz in China every province has different sauces use in fried rice. Stir frying was the technique in cooking invented by ancient Chinese royal chefs. Blackbean sauce, oyster sauce, soysauce, etc .. they mostly used that and added some five spice Chinese herbs with vegetables like kangkong or water chestnuts. Chinese people always see to it that their foods have a vegetable with eat .

    • not really? fried rice is mainly cooked by adding leftovers to old rice (hence why its "fried" not steamed). china is very diverse and each region will have different foods available to them whichs more of an organic reasoning to their style. i dont doubt that higher standing ppl also eat it but its origin shouldnt be credited to them.
