Actually some say that the prophet (peace be upon him) said that every animal/plant that lives in water is halal to eat , Not sure if it includes sharks tho . But in general anything that lives in water is permissible to eat

yeah that's why it's still debated by some people, it's okay because no specific hadith for sharks, whales, and some other debated animals like starfish, seahorses, lobster, crab, shrimp, and shellfish
I think any aquatic animals can be halal as long as they aren't poisonous, Intoxicating, or hazardous to health. As for sharks, In this case, You could say they are poisonous, Since they're also quite mercury. In general, I think sharks can be Haram or Halal depending on what type of shark meat we're talking about, Many scholars have different opinions on this, Usually they say it's halal because it's obviously a species of fish, So it could be halal since it could not bring any harm in eating it. Schools of fiqh were formed to guide people to make things easy. Especially in the time before everyone had such easy access to literally all hadith, following schools of fiqh was the best way to be as safe as possible. Having said that, in times of full access to all hadith, it makes no sense to follow the opinion of a scholar when we have authentic hadith from our prophet

yes , its mostly that the Animals that feed on meat are forbidden. As for the Animals that feed on grass and green things, they are permissible, such as sheep, cows, goats, and others.
There are some kind of animals that we can’t eat like carnivores and some animals like donkey are directly mentioned in a Hadith. But I am not sure if there is an explanation for each of them.

Some of these animals are not actually haram, just "makruh" which means "not recommended" Usually animals that are endangered or female animals that have babies or animals and animals such as donkeys or dolphins. Plus all animals that live in water are halal to eat but the problem lies in the way they are served because in Islam it's haram to eat or cook any animal while it's still alive.
Things are halal list: 1:All sea animals (includes sea lions, seals, sharks, whales, dolphins, octopus, shrimp, lobster, crabs, etc etc oh yes and sea turtles) 2: All river animals (some scholars say its not, like crocodiles, turtles, etc) but if you choose to do it, you are okay, because there is no clear evidence. 3: All animals who eat grass and vegetables are halal unless you have a specific hadith about a certain animal. 4: Only crickets, locuts and grasshoppers are halal 5: All vegetables are halal and so as fruits 6: All birds who don't have talons for hunting are halal. Yes Ostriches are halal. All Haram things to be consumed 1: All animals with fangs are haram except for Hyenas. 2: All lizards are Haram, except for Dubb. 3: All birds of prey are haram, all kinds of Eagles, Owls, and hawks. 4: Frogs are haram 5: bats are haram 6: snakes are haram 7: Swine is haram 8: all bears are haram including Panda bears even though they only eat bamboo. 9: Human flesh MEGA HARAM 10: All 4 legged insects are haram, making it have total of 8 legs. Such as Spiders, Scorpions, camel spiders, scorpion spiders, just anything with 8 legs. Eww

"For you and travellers the catch from the sea and its food are halal - permitted…’’ (Quran, al-Maida 5:96). "The verse is about all sea creatures. Catch from the sea means food that is to be hunted and food you can get from sea without hunting. According to this verse every kind of seafood is halal, in principle. Beside this, the Quran requests that all food should be clean (Tayyib: al-Baqara 2:168). From this point, for example, mussels are halal. However, if the place where they live is dirty it therefore turns it to unhealthy and unhygienic, then it’s not allowed to eat these mussels. Therefore it has to be examined whether the seafood is clean, healthy and hygienic or not."
