  • NIGHT BEFORE: - Season beef heavily and sear in frying pan with olive oil - Brush beef with mustard or horseradish - Blend chestnut mushrooms & chestnuts then cook with thyme till dry, then lay it out to cool - Overlap parma ham, add sprinkle of pepper, then layer mushroom mix thinly on top - Lay the beef and fold the layered mix over with clingfilm. Push and roll tightly, then nip at ends and squeeze, twisting like a cracker - 15 mins in fridge to set shape - More clingfilm, lay out puff pastry - Roll pastry until two edges meet, cut off any excess, and twist ends together - Roll in clingfilm again and put in fridge again for 5 mins (or over night) ON THE DAY: - Unwrap from clingfilm, brush in egg yolk - Mark pastry softly for decoration - Generous sprinkle of salt for crispness - Cook at 200 degrees, 35 minutes

    • I guess when you prepare it the day before, you should take it out of the fridge and let it sit at room temperature for at least 2hrs, otherwise the meat will not be cooked when the dough is ready

    • @@CodyvBrown true, it helps if after the searing, you put it in the oven for 18 minutes at 180-190 Celcius. That's how I do it and then I proceed according to the instructions.

    • Recommend brushing the inside of the puff pastry with egg white, so it sticks to the wellington. Otherwise your pastry falls off like you can see in this video.

    • It's not difficult it just has lots of steps that need to be done well. First time I tried it I didn't cook enough water out of the duxelle, if you do that the steam escaping from inside makes the pastry really soggy. It was still edible but I was crushed after spending so much money on a nice cut of beef for the family.

    • @@Hagg-o-tron you really ahve to dry the shit out of that duxelle...for me i did it for 1 hour and 30 minutes. first hour on a low heat.. last 30 minutes of a medium and then left it to cool for 15 minutes before asembling the wellington. for me thought the wrap has allways been the hardest part. but one thats done its smooth sailing for me.

    • Soggy pastry means you need to dry the mushrooms out a little more. Good luck!

    • @@WaiSanLee I looked around at a few, you can see even Gordon's is a little soggy on the bottom. The trick is to dry it on a rack so underneath can cool with the rest of the wellington. Also egg wash the inside of the pastry to create a barrier between the beef juices and the pastry. Going to give that a try and see how it works out.

  • I finally got around to making a Wellington today, and it was absolutely amazing. Though I did sous vide the filet before I baked it, which for me was great because that allowed me to control how cooked the meat was so I don’t just have to guess. Overall this recipe/dish is AMAZING and I would definitely recommend it even if it took me a solid day to make.

    • @@michaelgrier well I reckon it's more a matter of when in Kitchen Nightmares it's situations so bad it insults the profession of a chef and when it's Hell's Kitchen, if they want to work in Gordon's restaurant defending his reputation they better be up for the task and meet the standard, or piss off. I think it's understandable. As when you take Masterchef, he's "just" a judge, so wether they screw up their own dish is their mistake, he'll simply be there to tell them it is and what should've gone different.

  • I went out last night and had BEEF WELLINGTON with garlic mashed potatoes, vegetables and a lobster bisque. First time having Beef Wellington. I ordered it Medium Rare but I think they cooked it rare. It was delicious. Cost me $70 altogether. I may order it again if I ever attend another steakhouse.

    • The big problem I have with Gordon is he approaches these dishes from a restaurant chef's point of view - he forgets people want to have a simple style to cooking their Christmas meals. He forgets most of us aren't expecting restaurant level food. Over complicated is the signature sometimes to Gordon. He is a great chef, but his talent suits the restaurant and not the average home

I've got less than a metre square worktop to work on, and I don't have adequate tools (my blender's a potato masher). As a one-off treat for the famished in this house, I'll give it a go. I get a cut of meat from the local butchers, the rest I buy from Sainsburys. In my first attempt, I didn't have enough pastry... What a mess that was, but it still tasted great! In reality, you could ditch the meat completely and just go with the parma, mushrooms, chestnuts, and garlic filler as that's the tastiest part. My biggest gripe is Gordon's hands are about double the size of mine! Which is why he makes it look so simple?
