I am always struck by the spotless kitchens in S Korea. They look like they are being used for the first time. These videos are amazing. I think I would enjoy working in one of these establishments!

- @@holaamigas1096 For the "sponge cake" you just need 3 medium eggs, 90 grams sugar, 90 grams flour 00 for cake(or you can mix 60% flour and 40% potato starch to have a softer cake). the process you see in this video is old, it's easier to mounth the white with sugar and then add the (slightly mixed) yolks till you reach the right density . this is are the doses for a dripping pan of 45x36 cm. 7-8 minutes at 178 degree. For the cream you just need 500 ml of fresh whipped cream, 100 grams of fine sugar, vanilla flavour ,strawberries, it's pretty easy. Then you can use a pastry ring to cut ur shape and fill them faster than in this video.

I am noticing a theme here...korean bakeries will separate the eggs and process them separately at the start before mixing it with the rest of the batter. it probably makes the cake fluffier
