Spaghetti and Clams, My Favorite Pasta | Home Movies with Alison Roman
Let me introduce you to what is probably my favorite pasta of all time, brought to you by clams. It’s briny and bright, filled with garlic, lemon, and a generous pour of white wine, topped with spicy olive oil-fried breadcrumbs, and finished with parsley (my #1 favorite herb, sorry 2 dill). The clams do the heavy lifting here, giving up so much of their liquid to be soaked up by al dente pasta. It’s saucy, it’s delicious, and I hope you love it as much as I do.

1:25 Boil water and prepare the clams
2:25 Toasted breadcrumb topping
3:34 Build the sauce with garlic, lemon peel, clams, white wine, and seasoning
5:16 Season your pasta water and start boiling the spaghetti
6:07 Chop parsley for finishing the pasta
6:30 Stir the clams in the sauce until they open then transfer to a bowl
8:14 Add the nearly al dente pasta to the sauce and add the clams back to serve
9:30 Plate and finish the Clam Pasta with herbs, garlic, oil, and lemon juice

So glad to see a clam video. I love clams so much. They not only put me through college, but bought me my first car. Turns out, a college girl in some Daisy Dukes can make A LOT of money shucking clams on the boardwalk at the Jersey shore. Shrimp scampi, while delicious, never gave back.
There is nothing wrong with parsley but this recipe with coriander... another level!
I have to say I love panko in my pasta, with a TON of olive oil and garlic! I mean, come on!?! If you are going to have garlic… just load it on!!! I love clams, but usually the bellies are a little too gummy. I am going to have to try your way of cooking them. So excited to try this. I'll cook just about anything, but clams always make me nervous. Looking forward to trying this out.
Alison steals my heart again with her suggestion of heat. Spaghetti con vongole, want some. German white wine works best in this application, you don't want it too dry.
My recipe is basically the same but I add scallions whites to the fried garlic and lemon zest at the end instead of frying the rind. I add the scallion greens at the end instead of parsley.

I love clam pasta too but I've never been brave enough to make it using fresh clams...I've only used canned clams. You made it look so easy though, I might have to give it a try!

My heart broke a little when I heard you say you don't like all cats, just your cat. Glad I caught the addendum on my second watch, and my heart is now fully recovered.
