  • This is a Yum menu (basically spicy salad) which you can incorporate instant or grass noodles with it. The taste of Yum itself is quite strong with burst of all flavors making it a refreshing menu for locals.

  • We call this ‘Yum’ which basically is spicy salad, consists of protein(ground pork, seafood,etc), carbs like instant noodles, glass noodles, rice noodles, and veggies, herbs. The taste is always sweet, sour, a bit salty, and spicy

  • I imagine with fish sauce, fresh chilies, lime juice, toasted rice powder, etc. added with the instant ramen seasoning, the finished dish packs quite the flavor profile but is also quite salty.

    • The liquid ratio from blanching/boiling is enough to balance the ramen seasoning. I think that’s a tamarind or diluted fish sauce they add.

    • My family makes a version that’s basically a quick version of chow mein and the flavors are perfectly balanced unless you go ham with the fish sauce

  • That is literally a staple in my house, the ramen is very popular to eat among the Vietnamese community. Gosh, if that stall was around my house, I’d order it everyday or multiple times per day. Fresh & savory, mouthwatering.

  • Weirdly enough, we wouldn’t call this a noodle dish. They are all definitely what we call a salad dish. Here, noodle is the main ingredient of this spicy salad (Yum ยำ) dish.

  • If there is "Shio ramen in Japanese" in local super markets, it could being a optional taste. The taste of the shio ramen is based on salt and fish or chicken flavour. It would be fit to Thai tastes.

  • Does the cooking water get changed? If not, then it's best to buy at the middle of the day then all the flavors are already in the water. That makes the salad extra delicious.

  • I thought the word YUM MAMA means Mama brand noodle with extra flavor to make it more YUM(MY) compared to other regular MAMA-brand noodles ☺️ In Indonesia, we have similar thing, mom-pop resto or food vendor sell only dishes made of instant noodles and somehow, the taste is 10x more delicious than making it urself at home 😃
