The community you guys have helped build and maintain is something I'm always impressed by whenever I watch any of the Channel hosts featured in this video. It seems like Austin is really good at attracting people who understand that the more of us succeed together, the better. My friends and I are trying to create something similar in my country. We're in a different industry but I'm always inspired when I watch the videos and see that despite having strong individual personalities, you are all really geared in the direction of having as many enjoyable and prosperous activities together.
No need to salt them to purge them...
Love it. My folks do Lowcountry boil, and it’s great to see all the different riffs people take. In addition to the core ingredients, seen things ranging from peeled hard boiled eggs, mushrooms, blue crabs, green beans, okra, boiled peanuts…

Dammit, I thought the same thing, but I'm here in Oz. Crawfish are called yabbies out here, and that truck has the steering wheel on the wrong side. Vice Grip Garage just gave a way a beauty he restored (the F Truck) and I'm here in OZ feeling so left out I think I'll go cook something outside.

Something I learned years ago that takes crawfish boils to the next level. It starts with 2 big pots in the first is just water with a bunch of cut up lemons brought to a full boil. The second pot is water with all of your seasonings brought up to 140°. Dump the crawfish into the first pot and cook them at a full boil for 4-5 minutes. Pull them out and put them in the seasoned water and let them simmer at 140° for about an hour. The water in the first pot should be discarded after a few batches because it will be nasty. The advantage of this is crawfish that came out of it will be fully purged before they go to the seasoned water. That seasoned water can be used over and over again. Doing it this way will give you the best crawfish you've ever had because of the purging method and far superior than purging with salt water (or not purging at all) which no true cajun would ever do.

Swamp fire is my go to crawfish seasoning. Also use the garlic on some garlic bread 🤯. Once you have cooked all the crawfish throw in a spiral sliced ham! So good!

Love the sense of community! Have not been to a boil in years. The town I used to live in here in the PNW used to do one every year. Interesting note, it started a rivalry with Breaux Bridge, Louisiana thanks to Ernie Ford. Even got a voodoo priestess to curse the festival, guess the curse worked, since it got shut down permanently after covid.

I saw the title and got scared... It's easy to do - but I've seen it done wrong so many times! This was done right lol :) good job and great vid as always guys!
I mentioned on the other video from yesterday that I do crawfish boils here in Austin in late April (for larger crawfish). One thing about trash collection is to use the bottoms of shipping cardboard trays as your plate. It's easier to clean up after a boil with those (and less shells that will stink on the ground or let doggos get - some dogs get sick from them). I also cook my veggies, meat, and crawfish separately for those with shellfish allergies. Garlic with the crawfish is thrown out to avoid cross contamination.
Also, if you have chickens, they love attacking and eating live crawfish. It's hilarious to watch them attack.
Some of us in Acadian French areas(where cajuns come from) have a crawfish boils from time to time.
That's about a million dollars worth of crawfish in today's market. I needlessly get hungry watching any of Chud's videos, but this was ridiculous. Hell, I'm not even mad about the salt purge. If he had some blue crabs in there too? 🤯😍🗽

We did a crawfish boil for our rehearsal dinner when my wife and I got married. I t was awesome. We only did 40 pounds of crawfish for ours though :D

Crawfish are hard to come by, and I'm closer to where they are here in Houston. All we have been getting is up-armored shrimp lol, and paying a lot for it.
We did a boil up here in northern Virginia a few years ago with 100lbs that was flown up. You need one or two people that know how to cook and the others become labor. Whole day worth of eating and drinking and probably had about 15 crawfish left at the end with only 20 people eating. Wanted to do one this year but those prices ouch!

Used to live in southern Louisiana and every time I've had a back yard boil outside of Louisiana it's always frustrating when people eat a few... Those things are typically sold in 3-5lb increments. Better make sure you get people who plan to do work if you get a few sacks.

Every crawfish boil I've been to or participated in Louisiana does a salt purge just before boiling.... Speaking for about 37 yrs experience...
Hey, there’s always room to learn from your mistakes, Joe and Brad had no idea how to boil crawfish because nobody really eats crawfish in Texas from what I’ve seen on KZhead.

@rapinbatches makes the meat of the crawfish softer than necessary. Also it's added salt you don't need. If you boil your water and season the water properly. Purging with salt is a extra wasted step. The poop line is still there. When Purging you're just knocking the mud and other debris off so you can boil
