I'm from Eastern Europe, and my dear friend from China taught me to cook this dish, when we lived together in the student dormitory. Now she came back to China and we haven't seen each other for some years. But I cook this dish for my family and everyone adores it.

My mum used to make this for me as a kid (with soy sauce and sesame oil) and it was one of my fav parts of breakfast. Every time I’ve tried making it it ends up falling apart so thanks for this, I’ll try it making it again!

Saw it, decided to try it straight away. I would say one thing that's important I to not under salt the eggs, since they will be diluted with water. I had to use more soy sauce on mine to correct my little mistake. Will definitely try that again, it was great! Thanks! 😄

@@meoweth It was for me. I doubled the recipe and used 300 ml eggs and 450 ml water. However, I used no salt at all during cooking, and instead added it to taste afterward. The 1 Tbsp per 3 eggs the recipe calls for is way too much, I tried that first and that batch tasted like I had made it with seawater.
I hate cooking. But somehow, with your chill voice, your simple editing and especially, delicious looking food, everytime I see one of your video in the middle of the night, I want to get out of my bed and start following your receipe

You can use coconut milk instead of water. I sometimes add pork mince and glass noodle top with thinly sliced shallot and small amount diced capsicum. Sprinkle with pan roasted garlic mince oil before serving.
I believe milk is a better option. As it would add creamy like flavor and consistency
@@potentdeliriumI think it depends on how you want to develop the two different kinds of ingredients. The fat from coconut has a smoother mouth feel that fleets a little quicker than milk fat. For coconut milk I'd cook lemongrass and green onion in a little bit of coconut milk to then pour on top and sprinkle with cayenne pepper. The front end would be slightly sweet, the green onion would dampen the lemongrass from making the mid game too busy and would transition into the savory egg notes. The coconut would delay the cayenne until the end. For the milk/cream I think a 80/20 milk and cream ratio gives enough body for the structure needed for this recipe but not too much cream that would make it too salty by the time you can get your other flavors to come through. Soy and feta are really lovely with eggs and having the heavy cream will make their notes linger. Normally I'll reduce the soy sauce and crumble feta into nerd candy size pieces (rubbing the feta between the palm of your hands makes it uniform and quick). I also really like smoked Gouda with Worcestershire and my dirty pleasure is ranch, BBQ and siracha all drizzled on top. Not so much which is best vs which is better suited for the ingredients and flavor profile that you prefer.
Coconut or evaporated milk may work too

We steamed the eggs with water plus dried shrimp, mung beans noodles , and chopped green onions (the traditional Chinese style) added light soy sauce, white pepper and a dash of sesame oil..very delicious!

I don't know if it's a mistranslation or something, but 1 tablespoon of salt for three eggs is way too much salt, even after diluting with 1.5x the amount of water. I made my first batch exactly following the recipe and it tasted like it was made with seawater. I think even a teaspoon would be pushing it. I ended up omitting the salt entirely and just salting it to taste after serving - the lack of salt doesn't seem to affect how the eggs cook anyway. I also discovered that if you add some sugar instead of salt (I used 2 Tbsp of sugar, but I'll probably further tweak this amount) you can make a very easy sweet custard-like dessert.
