We visited the only caviar farm in the United States legally allowed to breed beluga sturgeon. Russian immigrant Mark Zaslavsky brought live beluga into the country in 2003, just before the US government banned imports of the species in 2005.
Beluga sturgeon are native to the Caspian Sea, and are classified as critically endangered by the World Wildlife Fund.
The farm breeds five different types of sturgeon, some of which don’t take as long to mature as beluga, which allows the company to harvest their eggs for caviar and take them them to market.
Zaslavsky has pledged, as part of his agreement with the US government, to donate fertilized beluga eggs in the hopes that they will eventually strengthen the population of beluga in the wild.

  • When I was a child I ate an entire jar of Beluga Caviar while visiting my grandmother. My parents had chosen a much simpler lifestyle so I didn’t realize how costly it was. I just knew it was good on the toast her chef had made it on. So when I found the little jar I went to town; assuming there were a couple so it would be fine. I realized even back then; I had eaten over $1000 on under 30 minutes.

Some of you might not know, but we also have this kind of similar situation, we have a seed vault, which is the _Svalbard Global Seed Vault_ , where all the seeds from different plants in different countries all over the world have been stored as a stock/copy in case of a disaster. The Seed Vault is located on the Norwegian island of Spitsbergen, near Longyearbyen, in the remote ArcticSvalbard archipelago, approximately 1,300 kilometres (810 mi) from the North Pole.

  • In the late ‘90’s I was fortunate enough to experience real Beluga Caviar. Toast Point, Beluga Carviar, topped with diced hard boiled egg, diced mild onion, and a bit of sour cream. Honestly, it was the most amazing thing I’ve ever eaten. I wish this man and his company all the best.

    • I think he's only using the stripping method for the Beluga but not the Ostera or Sveruga. Makes sense though, Beluga takes a long time to mature compared to the latter. LStripping eggs in that manner can yield damaged ones, but in return he can keep having the fish produce more and doesn't need to wait another 10+ years for beluga eggs.

    • Beluga and other sturgeon in the Caspian Sea are endangered as a result of years of rampant overfishing and pollution mainly due to Russian oil production,and damming of the home rivers of the fish.There are incredible obstacles to saving the species,they will likely become extinct in their native habitat soon.

  • Just like with diamonds, caviar is also artificially expensive. Through careful regulation that's how the price is determined. Both could be much less expensive.

    • Then everyone would be buying it and sturgeon would be overfished into extinction due to a now lucrative market. Diamonds are another case, and it’s simply not comparable to to the case of caviar.

    • Except this caviar comes from an Endangered Species, which except for this one farm is only available on the black market. Rarity justifies price, at least for people who enjoy the flavor.
